French Toast Casserole is a popular breakfast dish that is loved by many for its sweet and savory flavors and its unique texture.

We make it on special occasions because it feels like a splurge to me. It’s definitely one of my daughters favorite breakfasts and it’s absolutely perfect for a brunch.

  2. Versatile: This recipe is also very versatile, as it can be made with a variety of different gluten-free bread types, but Canyon Bakehouse is always our favorite and their Hawaiian Sweet Bread is my favorite for this recipe.

  3. Customizable: You can customize your French Toast Casserole to your liking by adding different toppings or flavors, such as fresh fruit, whipped cream, or syrup. Typically we just add our fruit to the top, but this time around I added blueberries into the casserole and it was fabulous!

Ingredients needed for Blueberry Gluten Free French Toast Casserole:

  • Eggs
  • Coconut Milk
  • GF Sandwich Bread: Cut into cubes and stale. You can leave the cubed bread of the counter overnight to get it stale. Alternatively, you could use Canyon Brioche style rolls, but you will likely need 2-3 bags of them. 
  • Cinnamon, Nutmeg

For the Crumb Topping you will need…

  • GF All Purpose Flour: I only use Better Batter or my Gluten Free All Purpose Flour Blend
  • Brown Sugar: You could use coconut sugar in place if you are trying to keep it clean!
  • Vegan or regular Butter
  • Blueberries: Optional, keep them out or add your berry of choice!
  • Favorite Toppings such as berries, powdered sugar, whipped cream and syrup. 

How to make Dairy Free French Toast Casserole

In a large bowl whisk the eggs and coconut milk. Stir in the cinnamon and nutmeg.

Add the cubed bread and let it soak up the mixture for 10-15 minutes. Add berries if desired. Preheat the oven to 350ºF.

Pour the bread into a 9x13 baking dish that is sprayed with non stick spray, or greased.

  1. Bread Selection: It’s important to select the right type of bread for your French Toast Casserole. Ideally, you want to choose a bread that is slightly stale, as it will hold up better when soaked in the egg mixture. I like to cube my loaf and leave it on the countertop overnight if it’s not stale yet.

  2. Soaking the Bread: The key to making a great French Toast Casserole is to soak the bread in the egg mixture for at least 30 minutes, or overnight if possible. This allows the bread to fully absorb the flavors of the eggs, milk, and other ingredients.

  3. Baking: Once you have soaked the bread, you can then bake the casserole in the oven until it is golden brown and crispy on the outside. You can also add toppings such as fresh fruit, whipped cream, or syrup to enhance the flavor and texture of the dish.

  4. Making this Dairy Free: It’s simple to make this dairy free by using a dairy free milk, my go-to for this recipe is coconut because it’s thick, but any dairy free or dairy milk will do the trick.
