Cashew Cream Sauce Recipe

I began making this Creamy Vegan Cashew Sauce back in 2016 when I found out I was lactose intolerant.

I wanted a cheese replacement in my lasagna and this proved to be the perfect way to provide the richness of a ricotta without the dairy. 

The versatility of this cashew sauce recipe is what draws me back to it, time-after-time. It’s truly a chameleon. 

You can use it to give anything a creamy spin, such as pasta sauces like a creamy tomato sauce or an alfredo. But, you can also use it in Italian style casserole dinners.

What Ingredients are needed for Creamy Vegan Cashew Sauce…

Ingredients needed from creamy vegan cashew cream sauce

  • Raw Cashews: soaked overnight in room temp water, or soaked in boiling hot water for 30-45 minutes. Note: if your cashews soak for a very long amount of time, you might notice a color change in them. This is normal, however I do not suggest letting them soak for more than the suggested time.
  • Nutritional Yeast: this provides that cheesy taste you are craving.
  • Sea Salt, Granulated Garlic, Oregano and Dried Parsley
  • Avocado Oil: or any neutral oil of your choice such as olive.
  • Coconut Milk: you can use other dairy free milks but make sure they are plain and unsweetened.

How Long to Soak Cashews for Creamy Cashew Cream…

Note: if your cashews soak for a very long amount of time, you might notice a color change in them. This is normal, however I do not suggest letting them soak for more than the suggested time.

 

How to Make Cashew Cream

Make the cashew cream by rinsing your soaked cashews

Make the cashew cream by rinsing your soaked cashews and adding all the ingredients to a blender.

Add all the ingredients to a blender.

Blend on high for 2-3 minutes or until you have a nice creamy consistency.
