Fresh berries on top made this a true treat. This is also keto quick chocolate chia pudding recipe because when we recently did keto I found this to be low carb with the right milk. This healthy chocolate chia pudding is made with dates, so it is gluten-free, vegan, paleo, keto (with keto milk).

During my first 2 days of whole 30 I realized I needed a dessert. I needed something to fight that craving. I also wanted a recipe that could be breakfast too. This Instant Chocolate Chia Pudding for Whole 30 recipe totally did the trick. Technically, I don’t know if this recipe would be considered whole30 compliant since it contains dates, but hey- it did the trick!

I have been making chia puddings for sometime now, but the traditional way of making chia pudding is puttin in the whole seeds and letting it soak overnight.

My kids would complain about the seeds and I wondered how to make it smooth and creamy. The Blendtec blender was the answer to this question! Not only did it make this an instant chocolate chia pudding, meaning it doesn’t need to chia in the fridge

But, this was also a chocolate chia pudding with coconut milk since my daughter is lactose intolerant. If you do not have a Blendtec, you can still make this recipe with any blender, but it really does an excellent job.

We all grew up eating instant pudding out of the box. I mean, it’s easy and super convenient. Plus it tasted good.  After we found out my son had a corn allergy making pudding from a box was no longer an option.

So, when I need to make pudding for a recipe or for the kids my options are this recipe, my Chocolate Pudding (Gluten Free, Dairy Free, Corn Free), Vanilla Pudding (Gluten Free, Dairy Free), or my Banana Pudding (Gluten Free, DairyFree). These are all corn free as well.

This instant chocolate chia pudding is so easy to make because you just put the hand full of ingredients in your blender and let is blend. It will thicken instantly. Then you can chill it until you are ready to eat it.

If you aren’t whole 30 you can add maple syrup to sweeten it a bit, this keeps it paleo. This chocolate chia pudding with coconut milk is not sweet because its whole 30.

The dates help a little, but if I wasn’t doing a Whole30 I would totally add 2 TBSP. of maple syrup to this and increase the amount of chia seeds to 1/3 cup of a cup instead of 1/4.

Berries and even bananas are also another great way to add some sweetness to this instant chocolate chia pudding. I topped mine with strawberries, blueberries, and coconut chips.

If you really want to add some extra flavor, adding a drizzle of almond or cashew butter would be decadent.

How do I make this Instant Chocolate Chia Pudding Recipe?

It’s as simple as adding all of the ingredients to the blender and blending for about 1 minute. Turn off the blender and give it a good stir and then blend for another 30-45 seconds or until it turns thick.

Store it in the fridge and add your favorite toppings when ready to serve.

You can store for about 3 days in an airtight container in the fridge.

For a KETO option you will want to leave out the maple syrup and dates. You can use a KETO sweetener like Lakanto maple syrup. Also, make sure your milk is KETO friendly. I recommend Mooala KETO milks.

How do you make chia seed pudding not slimy?

This is a good one because if you have kids then you know that texture is very important! Blending the seeds vs. letting them soak overnight is the key to making this pudding thick and not slimy at all.

The chia seeds expand when you let them soak up the liquid and that is what give them a slimy texture. Blending the seeds breaks them up and then they expand with the milk.

So, the answer to this is blending the pudding instead of using whole chia seeds is how to make chia seed pudding not slimy.

Do you soak chia seeds before making pudding?

No, there is no need to pre soak the seeds.

What is the texture of chia pudding?

Some will compare it to that of tapioca pudding when you do not blend the chia seeds. I personally love it, but my kids are turned off by it. This pudding is just a regular style pudding and it thickens more as you refrigerate it.

Ingredients

  • 1/4 cup chia seeds
  • 4 dates or 3 tbsp. maple syrup if your not whole 30
  • 1 1/2 cups coconut milk
  • 1/4 cup cocoa powder

Instructions

  1. Add all of the ingredients to your blender and blend for about 3 or so minutes. Until all of the seeds are blended through and its nice and creamy. 

Recipe Notes

If you are using 2 tbsp. of maple syrup increase the amount of chia seeds to 1/3 cup instead of 1/4 cup.

    Although Whole 30 compliant, it is not in the spirit of Whole 30. They even tell you on the website to ‘put away your chia pudding for 30 days’!

      Hi Lizzie, yes there are many different restrictions. This recipe helped get me through a slump though on my whole 30 journey. We enjoy it regularly as a paleo treat too.

      Yes, I use the can of coconut milk to make this compliant, but if you are not doing whole 30 or paleo you can use any coconut or plant based milk sweetened or unsweetened.

      Any milk will work perfect in this recipe! I love coconut because its a little thicker, but almond milk will work just fine. If it’s too thin then just refigerate it for a little while.
