During my first 2 days of whole 30 I realized I needed a dessert. I needed something to fight that craving. I also wanted a recipe that could be breakfast too. I have been making chia puddings for sometime now. I also used to buy a instant form of one a few years back. Unfortunately I can’t find it at the store anymore. When I used to make chia pudding my kids would complain about the seeds and I wondered how to make it smooth and creamy. The Blendtec blender was the answer to this question! Not only did it make this an instant chocolate chia pudding, meaning it doesn’t need to chia in the fridge, but this was also a chocolate chia pudding with coconut milk since my daughter is lactose intolerant.

We all grew up eating instant pudding out of the box. I mean, it’s easy and super convenient. Plus it tasted good. After we found out my son had a corn allergy making pudding from a box was no longer an option. So, when I need to make pudding for a recipe or for the kids my options are this recipe, my Chocolate Pudding (Gluten Free, Dairy Free, Corn Free), Vanilla Pudding (Gluten Free, Dairy Free), or my Banana Pudding (Gluten Free, DairyFree). These are all corn free as well.
This instant chocolate chia pudding is so easy to make because you just put the hand full of ingredients in your blender and let is blend. It will thicken instantly. Then you can chill it until you are ready to eat it.

If you aren’t whole 30 you can add maple syrup to sweeten it a bit. This chocolate chia pudding with coconut milk is not sweet because its whole 30. The dates help a little, but if I wasn’t doing a Whole 30 I would totally add 2 TBSP. of maple syrup to this and increase the amount of chia seeds to 1/3 cup of a cup instead of 1/4.

Berries and even bananas are also another great way to add some sweetness to this instant chocolate chia pudding. I topped mine with strawberries, blueberries, and coconut chips. If you really want to add some extra flavor, adding a drizzle of almond or cashew butter would be decadent.
How do I make this Instant Chocolate Chia Pudding?
It’s as simple as adding all of the ingredients to the blender and blending for about 1 minute. Turn off the blender and give it a good stir and then blend for another 30-45 seconds or until it turns thick. Store it in the fridge and add your favorite toppings when ready to serve.

This paleo and whole 30 recipe is easy with a few simple ingredients. You will love this healthy treat.
Ingredients
- 1/4 cup chia seeds
- 4 dates or 3 tbsp. maple syrup if your not whole 30
- 1 1/2 cups coconut milk
- 1/4 cup cocoa powder
Instructions

Add all of the ingredients to your blender and blend for about 3 or so minutes. Until all of the seeds are blended through and its nice and creamy.
Recipe Notes
If you are using 2 tbsp. of maple syrup increase the amount of chia seeds to 1/3 cup instead of 1/4 cup.
