Easy Gluten Free Kale and White Bean Sausage Soup
Easy Gluten Free Kale and White Bean Sausage Soup is the perfect hearty dinner that is budget and family friendly. This can be made quickly and will fill up everyone!
I have been making this super simple soup for a long time. I meant to get it up on the blog last year, but I haven’t had time.
With our insanely rainy winter here, soups are on constant rotation. So, while it still feels wintery outside- I knew I had to get this up!
You can grab all of the ingredients to make this delicious soup at your local store and the best part is that it is naturally gluten free!
Ingredients Needed to make Kale and White Bean Sausage Soup
- Chicken or Vegetable Broth: Either works just fine! I do prefer chicken, but use whatever you have on hand!
- Fresh Garlic: Diced
- Red or Gold Potatoes: Optional, but I love how this thickens up the soup, makes it extra hearty and adds amazing flavor
- Ground Sausage: You can use mild or hot depending on your preferences. Traditionally this recipe uses hot, but if your cooking for little kiddos, then mild could be a better option
- Onion: Diced
- Kale: Baby kale, chopped into bite size pieces
- White Beans: I prefer Cannellini
- Salt, Pepper, Parsley, Basil, Marjoram, and Granulated Garlic
- Oil: I like avocado oil, but any oil will work
How to Make this Super Simple Kale and White Bean Sausage Soup
- In a large stock pot on medium heat, heat the oil.
- Add the onions and garlic and cook until the onions are translucent about 2-3 minutes.
- Add the sausage, cook until browned about 8-10 minutes.
- Add broth, water, spices and seasonings. Bring to a boil.
- Add the potatoes and beans. Bring back to a boil and cook for about 15-25 minutes, the potatoes should be tender.
- Add the kale. Bring to a simmer and cook for an additional 8-10 minutes. Enjoy!

Ingredients
- 2 tbsp oil
- 2 tbsp minced garlic
- 1 yellow onion (med size) diced
- 16 oz ground sausage I like italian sausage
- 4 cups broth chicken or vegetable
- 4 cups water you can use broth if desired
- 1 1/2 lbs red or gold potatoes sliced into coins
- 2 15.5 oz canned white beans drained and rinsed. Cannellini is my favorite
- 1/2 tsp sea salt
- 1/4 tsp pepper
- 1 tsp dried parsley
- 1 tsp dried basil
- 1/2 tsp marjoram
- 1 tsp granulated garlic
- 8 oz baby kale washed and chopped if needed
Instructions
- In a large stock pot on medium heat, heat the oil.
- Add the onions and garlic and cook until the onions are translucent, about 203 minutes,
- Add the sausage, cook until browned. About 10 minutes.
- Add the broth, water, spices and seasoning. Bring to a boil.
- Add the potatoes and bring back to a boil and cook for about 15 minutes, the potatoes should be tender.
- Add the kale and coconut milk. Bring to a simmer and cook for an additional 10 minutes. Enjoy!
