Gluten Free Strawberry Waffles

Are you team waffle or pancake? My family is team pancake, but waffles are my favorite and that’s why I had to have the perfect homemade gluten free waffle recipe. This base of this easy gluten free waffle recipe can be made with any mix-ins to customize it however you would like. However, Gluten Free Strawberry Waffles never disappoint and they are perfect for using up seasonal berries. I am going to show you how to make the ultimate gluten free dairy free strawberry waffles. 

Gluten Free Strawberry Waffles

For years my go-to fruit for breakfast goods was always blueberries. Don’t get me wrong, I’ll never turn down a blueberry muffin, pancake, or waffle. 

However, we are growing strawberries in our garden now. This is our third year and they have more than quadrupled all by themselves.

Having all of these delicious, fresh, organic strawberries on hand had me wanting to use them in some recipes. 

If your strawberries are nice a ripe they will sweeten these waffles right up. It’s the perfect way to use them before they turn on you.

Ingredients you will need to make gluten free dairy free strawberry waffles…

  • gluten free all purpose flour – I used Better Batter original blend for this, but you could use my personal all purpose flour blend recipe too (if you use my flour blend recipe make sure to add 1 tsp of xanthan gum)
  • baking powder
  • salt
  • eggs or aquafaba
  • vegetable oil, any will do
  • coconut milk or your favorite milk, dairy milk works too
  • sliced strawberries

How to make gluten free waffles

Blend the flour, baking powder and salt.

Add the eggs or aquafaba, oil and milk. Mix until it is smooth and creamy.

Fold in the strawberries.

Heat your waffle maker and cook according to the makers directions. Use about 1/3 cup of batter per waffle.

So, for my double square maker I use 1/3 cup batter on each side and my belgian waffle maker has 4 compartments, so I use 1/3 cup for each compartment.

My waffle maker will light up when it is done, but generally it takes about 6-8 minutes for each waffle. 

Serve with butter and syrup and additional strawberries if desired. Enjoy!

What are gluten free waffles made of?

Gluten free waffles are made just like traditional waffles except they use a gluten free all purpose flour. Gluten free flours need a binder and that is typically made of either xanthan gum. guar gum, or psyllium husk. 

In addition to flour the waffles need baking powder, salt, eggs or aquafaba, oil, milk and strawberries.

Better Batter Original Blend- This is what I used to develop the recipe. This is the BEST flour I have ever used and no one will ever know you are baking gluten free with this blend

Better Batter Artisan Blend- The Artisan blend bet resembles a whole grain blend. This is rice and gum free and has a slightly darker color to it.

It is sorghum based and works amazing, especially for baking bread, yeast risen recipe and anything really. When using this flour allow your batter to rest for 20 minutes. 

My Gluten Free All Purpose Flour Blend– This is my tried and true flour blend recipe. I developed it about 12 years ago and used it exclusively for 10 years. This blend works in any of my recipes. If you use this blend add 1 tsp xanthan gum to the dry ingredients. 

How to make this recipe vegan

To make this vegan you will use aquafaba, 1/4 cup in place of each egg for a total of 1/2 cup aquafaba. 

Why type of milks work best?

I used coconut milk for this recipe, but honestly any milk will work for this. I recommendation would be coconut, almond or flax if you are looking for a vegan option.
