These vegan gluten free blueberry muffins are truly the best vegan gluten free blueberry muffins we have ever had! They are incredibly simple to make with ingredients that are easy to find. Gluten free egg free blueberry muffins that are fluffy, moist and the perfect amount of blueberry goodness. 

Muffins are a food group in my home. With two rapidly growing and active children, everyone is hungry! Muffins are an easy grab-and-go snack or breakfast that I always keep on the counter top for my kiddos.

Every week I make my Blender Muffins for the kids. They are 30 minutes start to finish, refined sugar free, flourless, and packed with protein. The kids love them and they are perfect for using up ripe bananas. 

However, this week Claire kept asking for blueberry muffins. I realized I haven’t made any in forever. 

Then I realized that the only Blueberry Muffin recipe I had was my blender muffin recipe from my first cookbook, Living Freely Gluten Free. 

So, Claire and I were off to create the perfect gluten free egg free blueberry muffins.

In addition to blogging I work in digital marketing and freelance as a social media manager. Through this I have learned the powers of aquafaba and vegan baking. 

So, initially I knew I wanted to make these vegan blueberry muffins, but I did not realize they would quickly become the best vegan gluten free blueberry muffins I’ve had.

These moist and fluffy, yet tender muffins are the perfect texture and have bursts of blueberry goodness in every bite.

What ingredients do I need to make these gluten free egg free blueberry muffins?

  • Vegan Butter
  • Sugar
  • Aquafaba or Eggs
  • Baking Powder
  • Salt
  • Vanilla Extract
  • Gluten Free Flour, I use Better Batter Original Blend
  • Coconut Milk
  • Fresh Blueberries

Alternatively, you can make your own flour blend. I create this recipe 10 years go. Grab the recipe HERE. However, you will need to add 1 tsp. of xanthan gum to the batter when you add the flour. 

How to make the best vegan gluten free blueberry muffins

Preheat the oven to 350 degrees F.

In a stand mixer add the butter, sugar, and aquafaba. Mix on low speed for 1 minute.

Add the baking powder, salt and vanilla. Blend on low for 30 seconds.

Turn the blender off and add the flour. Turn the mixer on low and once the flower is blended add the milk. Blend on low for 1-2 minutes. 

Turn off the mixer and fold in the blueberries. Scoop into your prepared muffin tins and sprinkle the sugar on top. 

Bake for 25-30 minutes, or until a toothpick comes out of the center clean. 

Notes:

If you do not need your recipes vegan you can use regular butter, 2 eggs in place of aquafaba and any milk of your choosing.

Ingredients

  • 1/2 cup vegan butter
  • 1 cup sugar
  • 1/2 cup aquafaba
  • 2 tsp baking powder
  • 1/8 tsp salt
  • 1 tsp vanilla extract
  • 2 cups gluten free all purpose flour I use Better Batter Original Blend
  • 1/2 cup coconut milk
  • 2 cups fresh blueberries
  • 1 tbsp cane sugar for dusting the muffins

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a stand mixer add the butter, sugar, and aquafaba. Mix on low speed for 1 minute.
  3. Add the baking powder, salt and vanilla. Blend on low for 30 seconds.
  4. Turn the blender off and add the flour. Turn the mixer on low and once the flower is blended add the milk. Blend on low for 1-2 minutes.
  5. Turn off the mixer and fold in the blueberries. Scoop into your prepared muffin tins and sprinkle the sugar on top.

    It says sugar free and packed with protein. Am I missing something here. Sugar in the ingredients and not seeing how this is packed with protein.
