Vegan Gluten Free Strawberry Waffles

Homemade gluten free waffles are easy to make with this gluten free vegan strawberry waffle recipe.

Ingredients

  • 2 cups gluten free flour blend
  • 1 tbsp baking powder
  • dash salt
  • 2 eggs or 1/2 cup aquafaba
  • 1/2 cup vegetable oil
  • 1 3/4 cup coconut milk
  • 2 cups strawberries sliced into small pieces

Instructions

  • Blend the flour, baking powder and salt.
  • Add the eggs or aquafaba, oil and milk. Mix until it is smooth and creamy.
  • Fold in the strawberries.
  • Heat your waffle maker and cook according to the makers directions. Use about 1/3 cup of batter per waffle. So, for my double square maker I use 1/3 cup batter on each side and my belgian waffle maker has 4 compartments, so I use 1/3 cup for each compartment.
  • My waffle maker will light up when it is done, but generally it takes about 6-8 minutes for each waffle.
  • Serve with butter and syrup and additional strawberries if desired. Enjoy!
