Paleo Roasted Red Potatoes Recipe

This simple yet satisfying paleo roasted red potato recipe is perfect to go along with breakfast, lunch, or dinner. Gluten free roasted red potatoes are a staple and something that we make weekly in out house. One of my favorite way to use up the leftovers of these vegan roasted red potatoes is to reheat them up in the morning and serve them with eggs. Here is my healthy yet simple easy oven roasted red potato recipe.

You can make these with baby red potatoes, or regular sized red potatoes. I make both, but the only difference is prep and the cook time can vary.

If the potatoes are regular sized I slice them into bite sized wedges. If the baby potatoes are small enough then you can just wash, coat, season and bake.

Bake time is typically 45 minutes, but if your potatoes are exceptionally small you can decrease the cook time. Check them and once they are tender then they are ready to go! 

 

Ingredients for Gluten Free Roasted Red Potatoes

  • 3 lbs of red potatoes
  • sea salt, I prefer pink himalayan
  • pepper
  • granulated garlic
  • parsley
  • thyme
  • sage
  • rosemary
  • oil of your choice, avocado oil is my favorite

How to make these Easy oven roasted red potatoes

Super easy to make!

Preheat the oven to 425 degrees F and line a baking sheet with parchment paper. 

Start by washing and chitting the potatoes into bite size pieces. No peeling. If they are baby potatoes then do not cut.

Put the cut potatoes into a large bowl and drizzle the oil all over them. Toss to coat all of the potatoes. Sprinkle the potatoes with all of the seasonings and toss well to coat each potato evenly.

Lay the potatoes on the baking sheet, spreading them out well.

Bake for about 45 minutes, if they are baby potatoes check them at the 30 minute mark. You want them super tender. 

There is really no need to flip the potatoes during the cooking process.

Is it necessary to boil potatoes before roasting?

No boiling required for a traditional roasted potato recipe

Do baby red potatoes need to be peeled?

The skin is part of the flavor factor in this recipe. Please do not peel. Give them a good wash and that’s it!

Can you eat baby red potatoes?

You can and you should!

Do you need to poke baby red potatoes before baking?

It is not necessary to poke baby potatoes. They are small enough to cook well without being poked.
