Gluten Free Vegan Magic Cookie Bars (Dairy Free)
These gluten free vegan magic cookie bars are one of those desserts that instantly takes me back to childhood.
My grandma Olga used to make magic cookie bars when I was growing up, and they were always one of my favorites. They were rich, gooey, and layered with chocolate, coconut, and crunchy nuts. I remember standing in the kitchen waiting for them to cool so I could sneak a piece.

When I went dairy free, I assumed these nostalgic bars were a thing of the past.
Then one day I spotted sweetened condensed coconut milk at the store and immediately knew I could recreate them. The result was everything I remembered and more. These bars are chewy, chocolatey, and perfectly sweet, with all the classic flavors I loved growing up.
The best part? They’re incredibly easy to make and come together with just a handful of ingredients.
If you’re looking for a simple gluten free vegan dessert bar, this recipe is pure magic.

What Are Magic Cookie Bars?
Magic cookie bars are a classic layered dessert known for their chewy texture and rich flavor.
Traditional versions are made with a graham cracker crust topped with chocolate chips, shredded coconut, nuts, and sweetened condensed milk. As the bars bake, the condensed milk melts into the layers and binds everything together into delicious, gooey dessert bars.
Many families have their own variation of this recipe, but the magic always comes from the same simple idea: layering a few ingredients together and letting the oven do the rest.
This version keeps all the classic flavor while being completely gluten free and dairy free thanks to gluten free graham crackers and sweetened condensed coconut milk.
Ingredients for Gluten Free Vegan Magic Cookie Bars
This recipe uses simple pantry ingredients that work perfectly together.

Gluten Free Graham Cracker Crumbs
These form the base of the crust. Use your favorite gluten free graham crackers and pulse them into crumbs.
Coconut Oil
Melted coconut oil replaces butter and helps bind the crust together.
Chocolate Chips
Use dairy free chocolate chips to keep the recipe completely vegan.
Walnuts
Walnuts add a delicious crunch that balances the sweetness of the bars.
Shredded Coconut
Sweet shredded coconut gives the bars their classic flavor and texture.
Sweetened Condensed Coconut Milk
This ingredient is the secret to making the bars gooey, rich, and perfectly sweet while keeping them dairy free. My go-to brand is Nature’s Charm and you can grab the link from Amazon here.
How to Make Gluten Free Vegan Magic Cookie Bars

Step 4: Sprinkle the chocolate chips evenly over the crust.

Step 5: Add the walnuts and shredded coconut in an even layer.
Step 6: If the sweetened condensed coconut milk is very thick, place the can in a bowl of hot water for 5–10 minutes to loosen it slightly.

Step 7: Pour the condensed coconut milk evenly over the entire pan.
Step 8: Bake for about 25 minutes until the top is lightly golden and bubbly.
Step 9: Allow the bars to cool completely before slicing.

Tips for Perfect Magic Cookie Bars
A few simple tips will help your bars turn out perfectly every time.
Press the crust firmly
A well-packed crust keeps the bars from crumbling.
Warm the condensed coconut milk
This helps it pour more easily and spread evenly across the bars.
Let the bars cool completely
This step is important because the bars will firm up as they cool.
Use parchment paper if desired
Lining the pan makes it easier to lift the bars out and slice them cleanly.
Variations and Substitutions
This recipe is easy to customize based on what you have on hand.
Nut-Free Version
Simply omit the walnuts if you need a nut-free dessert, but replace them with something that you like. Some options could be broken pretzels, dried fruit, or sunflower seeds
Swap the Nuts
Pecans are a delicious alternative to walnuts.
Extra Chocolate
Try mixing dark chocolate chips and dairy free white chocolate chips.
Regular Condensed Milk
If you’re not dairy free then you could use regular condensed milk.
