No Bake Vegan Strawberry Cheesecake Bars

We live in a small farm town. It is nice having seasonal fresh fruit near us, however I don’t love being near all the crops. What I do love is every time I am out running errands my favorite stand is just a few minutes away. I anxiously await for it to open every April/May. When it does open, I visit them once or twice a week. I always get a half flat of strawberries, plus a little bit of everything else they have.

I love supporting local businesses and nothing beats seasonal fresh fruit. It lasts longer in the fridge and the kids get excited about it!

When I buy the berries I have a process for when we get home. I put them in a huge bowl with fruit wash and water and let them soak. Then I rinse them and cut the tops off. I freeze half of them and put half in the fridge for snacking. Since I have been doing this for the past few months, the freezer is getting pretty full. This week I started thinking about what I could make for the blog with our beautiful bounty.

The first thing I thought of was a no bake cheesecake, but instead of a regular cheesecake I decided bars would be fun! Then I also made a vegan strawberry ice cream (coming to the blog in the near future). The kids went crazy for the ice cream, but these cold bars of heaven were my favorite. I shared with friends and family to prevent myself from eating all of them. They got rave reviews!

You might wonder, what is vegan cheesecake made of?

There are several ways you can make a vegan cheesecake. A lot of plant based recipes will use cashew cream, or something like that. They are delicious, but we do have to limit our cashew consumption and I also crave that authentic cream cheese flavor. So, usually my go-to is vegan cream cheese and coconut cream. Vegan cream cheese has come a long way in the last few years. Trader Joes has a good tasting one, but my absolute favorite is Kite Hill. It’s authentic and made with clean ingredients, but it does contain nuts! If you are avoiding nuts then stick with the Trader Joes, or any other brand. I have also been using a lactose free organic cream cheese and it is fabulous!

What ingredients do I need to make these No Bake Vegan Strawberry Cheesecake Bars?

  • Cookie crumbs
  • Melted coconut oil
  • Coconut cream
  • Vegan cream cheese
  • Sugar
  • Strawberries

How do I make these Vegan Strawberry Cheesecake Bars?

Start by blending the cookie crumbs with the melted coconut oil. Line a brownie pan with parchment paper and the cookie crumb mixture. Press it down very firmly into the bottom of the pan.

In a blender add the coconut cream, vegan cream cheese, sugar, and strawberries. Blend until creamy. Pour on top of the cookie crust and freeze for 30 minutes, then pull out and add sliced strawberries to the top. Cover the top with plastic wrap and freeze overnight.

The next day cut into bars and serve. Store in the freezer! You can let them thaw for 5-10 minutes before enjoying.

Ingredients

Crust

  • 1 1/2 cups gluten free cookie crumbs
  • 3 tbsp melted coconut oil

Strawberry Filling

  • 1 (15 oz.) can coconut cream
  • 1 (8 oz.) container vegan cream cheese
  • 3/4 cup sugar
  • 2 cups sliced strawberries divided

Instructions

  1. Start by making the crust. to do this blend together the melted coconut oil and cookie crumbs.

  2. Line a 8x8 brownie pan with parchment paper and pour the crust mixture into the pan. Press it down firmly. I use the bottom of a cup for this.

  3. In a blender add the coconut cream, vegan cream cheese, sugar, and 1 cup of the chopped strawberries. Blend until creamy. Pour the mixture on top of the crust and freeze for 30 minutes.

  4. Remove from the freezer and top with the remaining strawberries. Cover with plastic wrap and freeze overnight.

  5. Remove from the pan and use a sharp knife to cut into bars. You can let it soften for about 10 minutes first if you would like. It does melt fast. Serve immediately or store in the freezer.

      Until its smooth and creamy. It will depend on your blender. In my Blendtec it probably takes about 35-45 seconds.
