Simple Mediterranean Cucumber Salad

This refreshing Mediterranean Cucumber Tomato Salad is the perfect naturally gluten free and vegan dish. It pairs perfectly with grilled meats or is excellent as a stand alone salad for lunch or a light dinner. This healthy cucumber salad also happens to be our favorite keto cucumber salad recipe.

Cucumber salad has a long history in Mediterranean cuisine, where it has been enjoyed for centuries. The Mediterranean region is known for its abundant supply of fresh vegetables, making cucumber salad a popular and refreshing choice.

In Mediterranean countries with hot climates, cucumber salad serves as a refreshing and cooling dish, providing relief from the scorching sun. It’s perfect for summer gatherings, picnics, or as a light meal on a hot day.

One of the advantages of Mediterranean cucumber salad is its simplicity. It requires no cooking and can be prepared in a short amount of time. In the hot summer months I welcome all recipes that don’t require the stove or oven to be turned on!

We live in an area close to many farming communities and finding fresh local veggies is a huge perk. I love how that I am able to grab almost all of the ingredients needed from my local farmers.

This a naturally Keto Cucumber Salad

This salad is packed with low carb ingredients, therefore this is also a keto cucumber salad. When I am watching my carb intake this recipe is one that I eat often, especially if it’s the summer.

These are the ingredients need to make this easy keto cucumber salad:

Ingredients needed to make Healthy Cucumber Salad: Cherry Tomatoes, Cucumbers, Olives, Red Wine Vinegar, Onions, Olive Oil, Sea Salt, Bell Peppers, and Oregano.

Cucumber: Peeled and sliced into rounds and then slice the rounds in half

Cherry Tomatoes

Red Onion: Sliced thinly

Can of Sliced Olives: Drained, or you can slice up fresh olives if you would prefer.

Bell Pepper: Sliced thinly. You can use whatever color you have on hand

Crumbled Feta: I use Follow Your Heart crumbled Vegan Feta, but regular is great if your not dairy free or vegan

Sea Salt: I prefer pink himalayan sea salt

Dressing

Olive Oil: The higher the quality of oil, the better the flavor

Red Wine Vinegar

Dried Oregano: Use 1 tsp or 1 tbsp fresh oregano, chopped

Sea Salt: My preferred salt is pink himalayan sea salt

How to make this easy Mediterranean Cucumber Tomato Salad

Add the cucumbers to a medium to large bowl and add the salt. Toss well to coat

Add the remaining vegetables and toss to combine

To prepare the dressing, add all of the ingredients to a bowl or mason jar and whisk

Notes:

Any bell pepper will work, my favorite is red or green.

We love Follow Your Heart crumbled feta for this recipe.

Serve immediately after dressing your salad for best results, don’t dress ahead of time or it will become watery.

You can store this premade and undressed for up to 3 days in the fridge in an airtight container.

  • 20 oz. cucumber peeled and sliced
  • 20 oz cherry tomatoes
  • ½ red onion sliced thinly
  • 2.25 oz. can of sliced olives drained
  • ½ bell pepper sliced thinly
  • 6 oz. crumbled feta I used vegan
  • 1 tsp salt

Dressing

  • ¼ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp oregano
  • ¼ tsp sea salt

Instructions

  • Add the cucumbers to the bowl
  • Sprinkle the salt and toss well to coat
  • To prepare the dressing, add all of the ingredients to a bowl or mason jar and whisk
  • Add the remaining veggies and toss to combine
  • Pour over your salad right before serving
  • Add the feta cheese and toss again

Notes
