When warm weather arrives, I start craving lighter meals packed with fresh vegetables and bright flavors. This Mediterranean cucumber salad is one of my favorite dishes to make during the spring and summer months because it’s refreshing, simple, and comes together in just minutes.

Made with crisp cucumbers, juicy cherry tomatoes, olives, fresh vegetables, and a simple olive oil and red wine vinegar dressing, this salad is full of classic Mediterranean flavors. Cucumbers
Peeled and sliced into rounds, then cut in half for bite-sized pieces.

Cherry Tomatoes

Bell Pepper

Feta Cheese

Sea Salt
I prefer using pink Himalayan sea salt for its clean flavor.

Olive Oil

Red Wine Vinegar
Adds brightness and balances the richness of the olive oil.

Dried Oregano
A classic Mediterranean herb that adds depth.

Sea Salt

This simple dressing comes together in seconds and really lets the fresh vegetables shine.

How to Make Mediterranean Cucumber Salad

Add the cucumbers to a medium to large bowl and add the salt. Toss well to coat

This salad is incredibly easy to prepare and takes only a few steps.

Step 1
Add the sliced cucumbers to a large bowl and sprinkle with salt. Toss to coat evenly.

Add the remaining vegetables and toss to combine

Step 2
Add the cherry tomatoes, sliced onion, olives, and bell pepper to the bowl.

To prepare the dressing, add all of the ingredients to a bowl or mason jar and whisk

Step 3
In a small bowl or mason jar, whisk together the olive oil, red wine vinegar, oregano, and sea salt to make the dressing

Pour over your salad and toss

Pour the dressing over the salad and toss everything together until evenly coated.

Add the feta cheese and toss again

Dressing

Instructions

  • Add the cucumbers to the bowl
  • Sprinkle the salt and toss well to coat
  • To prepare the dressing, add all of the ingredients to a bowl or mason jar and whisk
  • Add the remaining veggies and toss to combine
  • Pour over your salad right before serving
  • Add the feta cheese and toss again

Notes

Any bell pepper will work, my favorite is red or green
We love Follow Your Heart crumbled feta for this recipe
Serve immediately after dressing your salad for best results, don’t dress ahead of time or it will become watery.
You can store this premade and undressed for up to 3 days in the fridge in an airtight container.
