Ingredients
- 20 oz. cucumber peeled and sliced
- 20 oz cherry tomatoes
- ½ red onion sliced thinly
- 2.25 oz. can of sliced olives drained
- ½ bell pepper sliced thinly
- 6 oz. crumbled feta I used vegan
- 1 tsp salt
Dressing
- ¼ cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp oregano
- ¼ tsp sea salt
Instructions
- Add the cucumbers to the bowl
- Sprinkle the salt and toss well to coat
- To prepare the dressing, add all of the ingredients to a bowl or mason jar and whisk
- Add the remaining veggies and toss to combine
- Pour over your salad right before serving
- Add the feta cheese and toss again
