These squares of amazingness are absolutely magic even while being gluten and dairy free. These are an absolute childhood favorite of mine. My Grandma Olga used to make these and I always loved them. After going dairy free I thought these were a part of my past, but when I found condensed coconut milk at the store, I knew I could finally create this recipe again!
Preheat the oven to 350ºF. Grease a 9x9 baking dish. In a bowl combine the graham crumbs and melted coconut oil, then pour it onto the bottom of the baking dish. Press the crumbs into the dish firmly. Sprinkle the chocolate chips evenly over the top, then the walnuts and coconut. If the condensed coconut milk is very thick then place it in a bowl of hot water for 5-10 minutes to melt it a bit. Then pour the condensed coconut milk evenly over the entire top. Bake for 25 minutes.
Notes
Press the crust firmly A well-packed crust keeps the bars from crumbling.Warm the condensed coconut milk This helps it pour more easily and spread evenly across the bars.Let the bars cool completely This step is important because the bars will firm up as they cool.Use parchment paper if desired Lining the pan makes it easier to lift the bars out and slice them cleanly.
