Gluten Free Chocolate Banana Muffins

Gluten free chocolate banana  muffins are something that has become a part of our lives.  Chocolate blender muffins are always a favorite, although I have many variations of blender muffins oats these chocolate banana oatmeal blender muffins are always a hit and never last long around here.

We love this recipe because they are full of healthy goodness. Not only are these gluten free chocolate banana muffins dairy free, flourless, but they are also refined sugar free. Packed with goodness we eat these all the time and I feel no guilt about throwing them at my kids.

These healthy muffins take less than 10 minutes to throw together and then 20 minutes to bake. So, from start to finish they are ready in less than 30 minutes.

These easy blender muffins are a wholesome healthy baked treat that tastes like dessert. They are truly the perfect grab-and-go breakfast because they are filling, but I offer them after school snacks all the time. I joke around saying I keep these on hand to throw at my kids, but its really no joke.

Hangry is an actual everyday situation around here, so throwing one of these at my son is something I do often.

These gluten free chocolate banana muffins are flourless because they are oat based. I use coconut milk to keep them dairy free, but any milk will do. You could use regular dairy milk, or any nut milk too.

I added flax for an extra nutrient boost and fiber. The peanut butter adds filling protein and since there is no refined sugar (sweetened with maple syrup) there is absolutely no guilt with these fabulous blender muffins oats.

We also buy a lot of bananas, we eat them daily and they are inexpensive. However, there are always 2 or so bananas that end up super ripe and no one wants to eat them. Nothing goes to waste and I use them to make these muffins.

When for some reason they all get super ripe at the same time and I have a ton of bananas to use up I make these and a loaf of two of my fabulous Banana Bread (Gluten Free, Dairy Free), or Chocolate Paleo Banana Bread. Soooo yummy!

What do I need to make these chocolate banana oatmeal blender muffins?

How do I make these easy blender muffins?

Start by preheating the oven and lining your muffin pan with muffin liners. In a blender add all of the wet ingredients first, then the dry ingredients. Do not add the chocolate chips. Blend on high for 1-2 minutes, or until everything is creamy and combined. Then stir in the chocolate chips and pour into muffin liners. Bake for 20 minutes. Allow to completely cool before serving. If they are still hot the muffins will stick to paper liners. Enjoy!

Ingredients

  • 2 Cups GF Oats
  • 2 Bananas
  • 2 Eggs
  • 3/4 Cup Peanut or Almond Butter
  • 2 TBSP. Maple Syrup
  • 1 TBSP. Ground Flax Seed
  • 1 tsp. Vanilla
  • 1 tsp. Baking Powder
  • 1 tsp. Baking Soda
  • Dash of Salt
  • 1 1/4 Cup Dairy Free Milk
  • ¼ Cup Cocoa Powder
  • 1 Cup Mini Chocolate Chips

Instructions

  • Preheat oven to 350 degrees F.
  • Add everything except the chocolate chips to the blender  and blend until smooth.
  • Add the chocolate chips and stir them in the batter and pour in your muffin tin.
  • Cook for about 20 minutes or until a toothpick comes out clean.

      Yes, they do! I would recommend wrapping them individually with plastic wrap and then putting them into a freezer bag. They stay fresh for about 4-6 weeks.
