Easy Sheet Pan Fajitas

Easy Sheet Pan Fajitas are a weeknight staple. Nothing is better than delicious fajitas and only 1 pan and 1 bowl for cleanup. This simple dinner is a great recipe for keto sheet pan fajitas as well. The best part of the recipe is the paleo fajita seasoning.

Easy Sheet Pan Fajitas

This recipe is versatile and you can make it vegan very easily. You can also use chicken, steak, or even a portabella mushroom. Anything goes! 

The most important part of the recipe is the paleo fajita seasoning. I make a double batch of this and keep it in my pantry for easy dinners. 

Luckily, if your using chicken, steak, or mushroom you do not need to adjust the cook time. 

Alternatively, you could just add a couple extra bell peppers and onions as well. I love making a huge batch of this and having leftovers. 

Keto Sheet Pan Fajitas

My favorite way to keep this recipe low carb/keto and even paleo/whole 30 is to eat it on a salad.

Ingredients

Paleo Fajita Seasoning

  • 1/4 cup chili powder
  • 1 tbsp sea salt
  • 1 tbsp paprika
  • 1 tsp coconut sugar
  • 2 tsp onion powder
  • 2 tsp ground cumin
  • 1 tsp granulated garlic

Fajitas

  • 2 bell peppers seeded and cut into strips
  • 1 large onion sliced
  • 1 lb chicken boneless skinless chicken breast or steak, or mushroom sliced into strips
  • 1/4 cup avocado oil
  • 1/4 cup paleo fajita seasoning

Instructions

Paleo Fajita Seasoning

  • Add all of the ingredients to a bowl and stir well to combine. Store in an airtight container.

Fajitas

  • Preheat oven to 425 degrees F.
  • Add the onions, bell peppers and chicken to a large bowl. Drizzle with oil and then sprinkle with seasoning.
  • Toss to coat everything evenly.
  • Line a baking sheet with parchment paper and pour your fajita mixture on top, spreading it all out evenly.
  • Bake for 17-20 minutes.
  • Serve in tortillas with topping or as a salad.

Notes

*12 gluten free tortillas or lettuce for salads
additional garnishes such as avocado, sour cream, cilantro, salsa.
