Paleo Instant Pot Corned Beef and Cabbage
This Paleo Instant Pot Corned Beef and Cabbage recipe is the easiest way to make a moist and tender corned beef that you are going to love. With a few small modifications this is also a keto corned beef and cabbage instant pot recipe. I will also answer some important questions to help you make this delicious and simple recipe.
Paleo Instant Pot Corned Beef and Cabbage
St. Patrick’s Day is right around the corner and this traditional Irish dish is a staple for this time of the year.
St. Patrick’s Day also happens to be my grandma and cousin’s birthday, so this special day has many reasons to celebrate.
In the past I did not like corned beef and cabbage, but I have some ways to cook it that bring out all of the delicious flavors.
The cut of meat is the most important part, too. Corned beef is traditionally highly processed and packed with bad for your nitrates. However, you can find some better corned beef these days from Butcher Box, that is what I used to make this recipe and it was delicious!
I recently saw some nitrate free corned beef at Trader Joes too. If you want to make this paleo it is very important to pick a cut of meat without additives.
Ingredients needed for this Paleo Instant Pot Corned Beef and Cabbage
- 3 lbs. Corned Beef
- 2 Cups Beef Broth
- Onion and Garlic
- Head of Cabbage
- 3 lbs. Red Potatoes
- 8 or so Carrots
How to make paleo instant pot corned beef and cabbage..
- Put your onions and garlic in the instant pot.
- Place the steam rack on the bottom of the Instant Pot on top of the onions.
- Place your rinsed brisket on top of it.
- Pour the beef broth on top and sprinkle in the corned pepper seasoning that came with the brisket.
- Cook on high pressure for 90 minutes.
- Release the pressure and add the carrots, cabbage and potatoes. Drizzle a little olive oil on the cabbage and sprinkle some salt and pepper.
- Cook on high pressure for 4 minutes and serve.
I used an 8 qt Instant Pot and it was a tight fit. If you cannot fit all of the veggies, then add half, remove everything except the liquid and place the remaining veggies in the IP and cook them for 4 minutes on high pressure.
Keto corned beef and cabbage instant pot
To make this recipe keto you can make a few modifications if you would like. When I am doing keto I will typically make the recipe as instructed and modify how much of the carb heavy items I eat based on how many carbs I have left for the day.
The meat has essentially no carbs, but of course all of the sides will be your carb heavy items.
One serving of this with all of the items has 33 net carbs. If you are on keto then that is way over your allotted carbs for the day, but if you are low carb then this meal would definitely work for you.
The potatoes have the highest carbs, if you are keto definitely leave those out.
The cabbage has about 7 net carbs per serving and the carrots have the same.
If you are wanting this entire meal to be keto friendly for everyone then leave out the carrots and potatoes.
How long does a 3 lb. corned beef take to cook in the instant Pot?
9o minutes on high pressure. Then add the sides and cook for another 4 minutes on high pressure.
Do you use the liquid in the corned beef package? Should you rinse corned beef before cooking?
Dispose of the liquid in the package and rinse the corned beef before adding it to your pot.
Can you have corned beef on paleo?
You can, but you must be mindful of the cut of meat. You will need to find one that is free of additives and nitrates. Your best bet is Butcher Box, Trader Joes, and Whole Foods.
