Vegan Pumpkin Caramel Sauce
I don’t get to indulge in caramel as much these days now that I am dairy free as well. I’ve attempted to make a dairy free version without success, but I am determined, so one will happen eventually. Recently though, while making pumpkin apple pie filling for my pumpkin empanadas I dreamt up this super simple Vegan Pumpkin Caramel Sauce.

I decided that I need this Vegan Pumpkin Caramel Sauce to put on top of pie, apple crisp, pastries, and ice cream. You can even dip fruit into it. Who doesn’t want a little drizzle of delicious pumpkin gooey in their life?
Vegan Pumpkin Caramel Sauce
Pumpkin season is in full swing at my house. We have the inside of the house decorated, but I have started a rule that the boys are not allowed to decorate the outside until October 1st. So, two things have made their way to the front porch anyways and the rest of it is accumulating in the living room. I kind of think they do this on purpose, because they know the clutter will drive me insane and then I will cave in. They know what they are doing and it’s totally working.
Last year the kids were not that into pumpkin, but they have come around this year. We are enjoying this Vegan Pumpkin Caramel Sauce on our pumpkin ice cream and apple crisp. Claire requested more gooey stuff for her crumble and I knew what she was taking about.
It is also super easy to make this a paleo vegan pumpkin caramel sauce by simply switching the brown sugar with coconut sugar.
