Pumpkin Pie Overnight Oats (Gluten Free, Vegan)

 When fall is here you will need a simple and healthy breakfast that you can prep ahead of time and that will become your go-to. Gluten Free and Dairy Free Pumpkin Pie Overnight Oats are exactly that go-to breakfast you will want.

These Gluten Free Pumpkin Pie Oats are naturally vegan as well, so you can share with your friends. This recipe makes a serving for one, so double or triple them as needed.

Gluten Free and Dairy Free Pumpkin Pie Overnight Oats

We all need some fun fall flavors this time of the year. Gluten Free and vegan overnight oats are something I love making because I prep them on a Sunday and we have grab-and-go-breakfasts all week.

It truly tastes like pumpkin pie, but without all of the guilt.

Everyone can top them as they like too. I love nuts on top, but my kids like chocolate chips.

You only need a few simple ingredients to make these Dairy Free Pumpkin Pie Overnight Oats

  • Gluten Free Oats, these need to be certified gluten free to be celiac safe and protocol oats are the safests. Brand like Zego are well trusted. 
  • Dairy free milk, any will do. Our favorite is flax and coconut milk
  • Ground flax seed
  • Ground chia seeds (regular chia seeds will work too)
  • Pumpkin Puree
  • Vanilla
  • Cinnamon, Salt, Ginger, Nutmeg, Cloves or 1 1/4 tsp of pumpkin pie spice
  • Maple Syrup

The flax and chia seeds plus this oats make this a superfood breakfast. On top of that it is refined sugar free and sweetened with maple syrup. 

How to make these Gluten Free Pumpkin Pie Overnight Oats

My favorite part about this Gluten Free and Dairy Free Pumpkin Pie Overnight Oat recipe is that it takes literally 2 minutes to throw together in a jar and then you just let it sit in the fridge overnight.

You can either add all of the ingredients to a mason jar or bowl. If you use a mason jar you can just shake it up with the lid on and then place it in the fridge. In a bowl, I will stir it well and then put a lid on and place in the fridge.

Sometimes I will divide them up into servings for easy grab-and-go. You can use smaller mason jars, or tupperware. 

Usually when I make this I will triple the recipe, so there is plenty to go around. 

You can grab it before you head out in the morning and you will have a delicious and filling breakfast that is healthy, but tastes like pumpkin pie.

I love to top it with chopped walnuts and even chocolate chips sometimes. If you live in the warm climate like I do, then a cool and refreshing fall breakfast is always a winner.

Ingredients

  • 1 Cup Non Dairy Milk I chose almond but cashew or coconut would taste amazing
  • ½ Cup GF Oats
  • 1 TBSP. Ground Flax Seed
  • ¼ Cup Pumpkin Puree
  • 1 tsp. Vanilla
  • ¾ tsp. Cinnamon
  • Dash of Salt
  • 1 TBSP. Maple Syrup
  • ¼ tsp. Ginger ground
  • 1/8 tsp. Nutmeg
  • 1/8 tsp. Cloves
  • 1 tbsp ground chia seeds

Instructions

  • In a jar, add all of the ingredients and stir. Put the lid on and refrigerate overnight and enjoy the next morning!

Notes

I often can not eat an entire jar of these, so about half is a good serving for me. Also, if you are looking to reduce the amount of calories you could use a lighter calorie nut milk instead of the coconut milk. 
You can also use 1 1/2 tsp of pumpkin pie spice in place of the cinnamon, ginger, nutmeg and cloves.
