Healthy Breakfast Tacos

 You can serve these breakfast tacos for a crowd if you would like.  This breakfast taco recipe with potatoes is packed with delicious flavor and I don’t know about you, but I want my gluten free breakfast with avocado on it!

My entire family is gluten free and we suffer from multiple intolerances and allergens. The newest to pop up in our lives is a corn intolerance/allergy for my son. It is something new to us and we are still figuring it out through elimination for the last year. We have learned he has what looks to be an allergic reaction to corn syrup, an intolerance to corn starch, and he is seeming to be ok with real non-gmo corn.

Gluten Free Tortillas

However, in the beginning of this journey we eliminated all corn from his diet for about 8 months. During this time we began to search for a tortilla he could enjoy. I bought every single corn free and gluten free tortilla I could get my hands on. He loved the brand Potapas, but unfortunately we can’t find them in store anymore. His second favorite is Siete almond flour and chickpea tortillas. 

 

Breakfast Tacos for a Crowd

One of the things I love about this recipe is that you can feed a crowd with them. If you really need to stretch it then simply scramble some more eggs and make a few extra potatoes.

How do I make this gluten free breakfast with avocado?

Start with cooking the ground sausage, potatoes, and scrambled eggs. Heating the beans is optional, but you could do that at this time as well.

Then you will prepare the topping by washing and chopping the onions, lettuce, and avocado. Now you will heat the tortillas and build the tacos. To make these breakfast tacos for a crowd simply double the recipe.

Ingredients

  • 1/2 lb ground pork sausage
  • 1 15 oz. can black beans
  • 6 eggs scrambled
  • 2 cups fried potatoes use any potato, I used sweet potatoes that were prepackaged and frozen. You can use hash browns too.
  • 1 cup lettuce diced
  • 1/2 red onion diced
  • 1 avocado sliced or premade guacamole
  • 1/4 cup cilantro
  • 12 gluten free tortillas

Instructions

  • Start with cooking the ground sausage, potatoes, and scrambled eggs. Heating the beans is optional, but you could do that at this time as well. 
  • Then you will prepare the topping by washing and chopping the onions, lettuce, and avocado. Now you will heat the tortillas and build the tacos.
  • To heat the tortillas take out however many you plan to use and allow them to sit out for about 5 minutes. Then heat a small skillet on medium heat and place the partially thawed tortilla on the skillet. Allow it to heat for a minute or so, then flip and allow it to heat for another 30 seconds to 1 minute. Don't overcook them and don't overthink it, just heat and serve.
  • Build your taco with as much or as little of each item and enjoy!
