Orange Cranberry Loaf with Orange Icing- Gluten Free and Dairy Free
Gluten Free Orange Cranberry Loaf is the perfect winter treat (or anytime, really). This moist and delicious treat will easily become your favorite gluten free orange cranberry bread recipe.
Two flavors that my family loves are orange and cranberry. The citrus and tart of the two combined are delicious and pair perfectly together. Adding them together to create an orange cranberry loaf is a no brainer. The orange glaze on top makes this loaf a sweet treat that will be craved over and over again.
Gluten Free Orange Cranberry Bread
When I think of orange it reminds me of winter. I used to pick oranges with my grandma from her friends fruit trees. We would peel them together over her kitchen sink and the fragrance of oranges along with the crisp cold air go hand-in-hand to me.
The flavor of a sweet dried cranberry brings me to the holiday season. This orange cranberry loaf will be the perfect brunch, breakfast, or treat to share with tea all winter long.
I enjoyed my orange cranberry loaf with a little of the orange zest sprinkled on top. Yum! You can also add extra Graceland cranberries if you wish too. I found a half cup makes our perfect orange cranberry loaf, but the more the merrier, right!?
I recommend using a stand mixer to make this sweet orange cranberry loaf, it makes the job easier. However, if you don’t have one then make it happen with what you’ve got.
You will need a few medium sized oranges for this recipe. You will zest them and juice them. Nothing beats the flavor of fresh zest and juice in a loaf. I add a little bit of orange extract in the batter as well. That gives it the exact flavor you want and crave in an orange cranberry loaf.

You will add the Graceland cranberries last and simply fold them in. You want to keep those beauties in tact.

Ingredients
- 1 Cup GF All Purpose Flour
- 1/2 Cup Tapioca Starch
- Dash Salt
- 2 tsp. Baking Soda
- 3/4 tsp. Xanthan Gum leave out if your all purpose flour already has it
- 1 Cup Sugar
- 3 Eggs
- 1 5.3 oz Container Vanilla Dairy Free Yogurt
- 1/2 Cup Coconut Oil melted
- 3 TBSP. Orange Zest 2 medium sized oranges needed
- 1 TBSP. Orange Juice
- 2 tsp. Orange Extract
- 1/2 Cup Graceland Fruit Organic Dried Cranberries
Orange Icing
- 1 1/3 Cups Powdered Sugar
- 2 TBSP. Orange Juice
Instructions
- In a bowl, whisk together the GF all purpose flour, tapioca starch, salt, baking soda, and xanthan gum. Set aside.
- Preheat oven to 350ºF.
- Grease a loaf pan with coconut oil. Set aside.
- With a mixer on medium speed cream eggs, sugar, and yogurt for 1 minute.
- Add coconut oil. Mix for 1 minute.
- Add orange zest, orange juice, and orange extract. Mix 1 minute. Scrape the sides of the bowl.
- Add the dry ingredients and mix on medium speed for 3 minutes scraping down the sides halfway through. Fold in the cranberries and mix on low until they are well incorporated.
- Pour into loaf pan and bake for 1 hour or until a butter knife comes out of the center clean.
Orange Glaze
- In a bowl, mix together the powdered sugar and juice. Allow the loaf to fully cool before topping it with the glaze for best results. Feel free to garnish with orange zest and extra cranberries if desired. Enjoy!
