Two things scream summer to me is some good gluten free potato salad and macaroni salad. Let’s be honest, how often are we eating macaroni salad now that we are all gluten free? I can count on one hand how many times and with one hand and I really mean 3. Ya, in 5 years I have had macaroni salad 3 times. Those three times were magical though and that is why I can tell you every time because I remember it distinctly. That’s what happens when your gluten free. (Update, since creating this recipe I now have eaten it more times than I can remember)
So, next time you are BBqing or going somewhere and want to bring a dish that everyone will eat and never know it is GF, this is the one.
If you are like me, you will watch silently with pleasure as people shove your food into their mouths and then you will make your rounds explaining how its gluten free. But, don’t tell them until after they compliment how good it is.
It really truly tastes just like the macaroni salad you remember eating growing up.

2 cups of gluten free Elbow Pasta
1 cup mayo
2 TBSP. sweet relish
2 TBSP. diced onions
1 (2.25) ounce can of diced olives
2 pieces of celery diced
3 green onions chopped
- Boil and cook the noodles.
- Chop the veggies while its cooking and once its done mix all ingredients together and serve hot or cold.
