Grain Free Gingerbread Pancakes (Dairy Free, Paleo)

When I created these Grain Free Gingerbread Pancakes I had a couple requirements. I wanted healthy and fluffy gingerbread pancakes. I totally nailed it and then some. These amazing pancakes will melt in your mouth and become your holiday go-to healthy breakfast recipe.

This year I realized my love for all things gingerbread after I created my Gingerbread Cookie recipe. I quickly realized this was going to be a new go-to flavor for my holiday recipe creation. Fluffy gingerbread pancakes were first on my list.

The real test though is the Hubby and the kids. If they like it then it is a go for the blog. I was so happy that they all inhaled them and loved every bite. Out of the 4 of us there was only 1 pancake left. My kids even ate these healthy gingerbread pancakes without chocolate chips in them. That is a huge win.

I wanted to make grain free gingerbread pancakes because I personally like to eat grain free as much as I can and with my son having a corn allergy- grain free is an easy option for us.

How do I make these Healthy Gingerbread Pancakes?

They are as simple and adding the dry ingredients and whisking together including the spices. Add the eggs and coconut milk and then whisk well. Add the the melted coconut oil last.

Pour 1/4 cup of batter onto a hot skillet and cook about 2-3 minutes on each side. Check them by sliding a spatula underneath and looking at the color. They should be golden brown and the batter should not slide off when you test it.

Serve with maple syrup, honey, coconut, or nuts on top.

What is grain free all purpose flour?

I use my grain free/paleo flour blend for all of my grain free and paleo recipes. I know what your thinking- I don’t feel like making a blend. Let me tell you that it will only take 5 minutes and you won’t regret it- I promise. I use it to make other recipes like Paleo Pie Crust, Paleo Breakfast Cookies, Chocolate Paleo Banana Bread, and Paleo Pancakes. You will love having this blend in your pantry.

  • In a bowl add the grain free flour, coconut sugar, salt, baking powder, ground flax, ground ginger, cinnamon, all spice, and cloves. Whisk until well combined.
  • Add the eggs and blend.
  • Add the coconut milk and molasses (optional) and blend well.
  • Pour in the coconut oil while stirring at the same time and blend well.
  • Heat a skillet on medium heat. Use ¼ cup batter per pancake. Cook 2-3 minutes on each side. They don’t bubble up a lot, just a little. To test if it is ready to flip, slide the spatula under the pancake to take a look, it should be golden, and the batter on top shouldn’t roll off.
  • Serve with maple syrup, honey, coconut, and nuts if desired. Enjoy!
