Cilantro Lime Shrimp with Cauli Rice (Whole 30, Paleo)

I am full force into a Whole 30 right now, so I am in the process of dreaming up tons of flavorful recipes that are simple and healthy. First up is this amazing Cilantro Lime Shrimp with Cauli Rice.

It’s an incredibly easy dish that you can prep ahead and throw together in minutes. That is exactly what I am looking for in a recipe, especially during this Whole 30. I was actually really surprised at how fast it came together. This is enough to serve two, so I ate half of it for dinner and saved the other half for lunch the next day. In my opinion the leftovers were even better. I reheated it on the stove with a little avocado oil. Yum!

This is my second time doing the Whole 30. My first attempt over 4 years ago did not go very well. Back then the Whole 30 wasn’t as mainstream as it is now. I also ate dairy and TONS of grain back then. That detox was intense. I went into it wanting to lose weight, which is not the reason to do a Whole 30. You also couldn’t grab premade zoodles cauliflower rice at the convenience store like you can now, which is a real game changer to reduce prep time.

This time around I decided to do it for my health, not in vain. Knowing this and eating cleaner makes this a more tolerable experience. I won’t lie though, I would kill for a slice of my Paleo Chocolate Banana Bread.

Cauliflower rice is my favorite and we love shrimp. Costco carries a cilantro lime shrimp premade and I LOVED it. For some reason though it contains milk, so I no longer can buy it. Making your own is super easy though and healthier, especially since this Cilantro Lime Shrimp recipe is Whole 30, paleo, and just freaking delicious.

How do I make this Whole 30 Cilantro Lime Shrimp?

You will start by making a Cilantro Lime Shrimp marinade. The marinade is as easy as juicing some limes, pouring it on top of the shrimp, adding minced garlic, sea salt, and red peppers. Cover and allow to marinade for at least 20 minutes, but it can stay in the fridge overnight.

Heat the avocado oil in a skillet and add the shrimp. Cook 3-4 minutes on each side, remove from the pan. Now add the cauliflower rice and garlic to the skillet along with 1 TBSP. of Avocado Oil. Cook 6 minutes, then add the cilantro and half a lime (squeezed). Add salt to your liking.

Serve the shrimp on top of the rice and enjoy!

Ingredients

Cilantro Lime Shrimp

  • 1 lb. Peeled and Deveined Shrimp

Marinade

  • The juice of 2 Limes
  • 4 Cloves Diced Garlic
  • ½ tsp. Pink Himalayan Sea salt
  • ¼ tsp. Crushed Red Pepper
  • 2 TBSP. Avocado Oil

Cilantro Lime Rice

  • 2 Cups Cauliflower Rice
  • 1 TBSP. Avocado Oil
  • 2 TBSP. Lime Juice
  • 1 TBSP. Diced Garlic
  • 1 TBSP. Diced Cilantro
  • Salt to taste

Instructions

Cilantro Lime Shrimp

  1. Add shrimp, lime juice, garlic, salt, and red pepper to a bowl, toss. Cover and marinade for 20 minutes.

  2. In a skillet heat the oil on medium heat and add the shrimp marinade mixture. Cook 3-4 minutes on each side. Remove the shrimp from the skillet and make the Cilantro Lime Rice.

Cilantro Lime Rice

  1. Heat avocado oil in a skillet on medium heat. Add cauliflower, garlic, and lime juice.
  2. Cook for 6 minutes. Add cilantro and salt to taste. Serve with Cilantro Lime Shrimp.
