Sheet Pan Cod Dinner is my favorite fish dinner ideas for family. This post will tell you what goes with fish for dinner and why I choose these sides to make this simple one pan dinner recipe.

Sheet Pan Cod Dinner

Looking for easy throw together dinner ideas when your gluten free can leave you in a slump. It was very exciting to see that the Gorton’s Simply line is all certified gluten free. Many of the fish flavors are cooked in herbs and butter. 

The Gorton’s Simply line comes frozen and in individual packets. You simply bake them in the oven and throw sides on the baking sheet with it to make the perfect fish dinner ideas for family! 

What goes with fish for dinner?

I used one bowl and one sheet pan for this fish dinner idea. So, you might be thinking what goes with fish for dinner? There are many different sides you can use for your fish dinner ideas for family. 

I went with baby potatoes and carrots, but making rice, quinoa and even risotto are also great starchy side options.

For veggies you simply can’t go wrong. Truly, any veggie works with fish and that’s why fish is the perfect dinner. For this sheet pan cod dinner I chose carrots because the cook time is very similar to everything else in the dish.

With the potatoes and cod you get lots of delicious savory flavor, along with some light sweetness and crunch from the carrots.

What ingredients do you need to make this fish dinner idea?

 

  • Gorton’s Simply Bake Cod. Each box comes with 2 fillets, so buy however many you need. The veggies and potatoes serve 4. 
  • Avocado or Olive Oil
  • Baby Potatoes
  • Carrots
  • Herb Blend of sea salt, granulated garlic, parsley, sage, rosemary, thyme, and pepper

How to make this Sheet Pan Cod Dinner

Preheat the oven to 425ºF. Mix the herb blend by simply adding all the ingredients to a bowl and stirring.  In a bowl add the potatoes, 1 tbsp. of oil and half of the herb blend. Stir to coat the potatoes. 

Line a baking sheet with parchment paper and pour the potatoes on 1/3 of the sheet. 

In the same bowl add the carrots, remaining oil and remaining herb blend. Stir well to coat. Add to the baking sheet.

Place in the oven for 10 minutes. Remove from oven and reduce the heat to 350ºF. Add the cod to the baking sheet and bake for another 29 minutes.

Remove from the oven and serve! It’s that simple and easy!

Ingredients

Herb Blend

  • 3/4 tsp sea salt pink Himalayan preferably
  • 3/4 tsp granulated garlic
  • 3/4 tsp parsley
  • 1/4 tsp sage
  • 1/4 tsp rosemary
  • 1/4 tsp thyme
  • 1/4 tsp pepper
  • 1 lb baby potatoes
  • 10-14 small carrots
  • 2 tbsp avocado oil or olive oil
  • 4 Gorton's Simply Bake Cod Garlic Butter Fillet's

Instructions
