There are many variations of lentil soup out there and I have been making several kinds for years now. This instant pot lentil soup recipe is a vegan lentil soup with no tomatoes.

It is packed with flavor, veggies and lots of potatoes to make it very hearty and satisfying.

We eat a lot of soups in our house because my kids love them and it’s a great way to sneak in veggies. Weekly we enjoy Gluten Free Lasagna Soup and Whole30 Hamburger Soup, but one of my most popular recipes on the blog is my Vegetable Soup.

I knew I needed to get this hearty vegan lentil soup recipe up on the blog for everyone to enjoy.

Ingredients you need to make this vegan lentil soup with no tomatoes…

  • Oil
  • Carrots, Celery, Onion, Garlic
  • Vegetable Broth
  • Potatoes
  • Salt, Cumin, Bay Leaf, Parsley, Oregano, Thyme.
  • Red or Brown Lentils

 

How to make instant pot gluten free lentil soup

Turn the instant pot on sauté mode. Add the oil, carrots, celery, onion and garlic. Sauté for 8 or so minutes, stirring every 30 seconds.

Add the lentils and stir well to incorporate. Sauté for an additional 2 minutes. Turn the Instant Pot off.

Add the broth, spices, seasonings, and potatoes.

Turn the Instant Pot on the soup setting and allow it to do it’s magic! Enjoy.

F.A.Q’s

Do lentils need to be soaked before making soup?

When making lentil soup on the stove top it is recommended that you soak them first. I have found that cooking them with the veggies first and then using the Instant Pot makes a presoak unnecessary. In fact, if you are using the Instant Pot I would not recommend soaking first. 

Why has my lentil soup turned brown?

Lentils are a legume and once cooked they darken in color. This is perfectly normal and expected. 

Is lentil soup healthy?

This instant pot gluten free lentil soup is packed with flavorful nutrients and lots of healthy fiber and protein. It is an awesome healthy soup recipe you will enjoy. 

Which Instant Pot should I Buy?

I use the 8 qt Instant Pot. I also have the 6 qt, that was my first Instant Pot. However, I wanted a larger one so that I could double recipes and make bigger pots of soup and chili. The 8 qt is perfect!

  • 2 tbsp avocado oil

    The ingredients include potatoes but the directions don’t include them
