Instant Pot Vegan Lentil Soup

This simple and budget friendly vegan lentil soup is the perfect family meal.

Ingredients

  • 2 tbsp avocado oil
  • 4 carrots peeled and diced
  • 3 celery ribs diced
  • 1 onion diced
  • 3 tbsp diced garlic
  • 6 cups vegetable broth
  • 4 cups potatoes peeled and diced
  • 1 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1 bay leaf
  • 1/2 tsp thyme
  • 1 tsp oregano
  • 1 tsp parsley
  • 2 cups red lentils washed

Instructions

  • Turn the instant pot on sauté mode. Add the oil, carrots, celery, onion and garlic. Sauté for 8 or so minutes, stirring every 30 seconds.
  • Add the lentils and stir well to incorporate. Sauté for an additional 2 minutes. Turn the Instant Pot off.
  • Add the broth, spices, seasonings, and potatoes.
  • Turn the Instant Pot on the soup setting and allow it to do it's magic! Enjoy.
