Ground Chicken Taco’s

Ground Chicken Tacos are a simple, easy, inexpensive way to switch up you taco Tuesday. Garnish your ground chicken tacos with salsa, lettuce, hot sauce, rice, beans, and avocado.

 

Ground Chicken Taco’s
This is an easy way to switch up your weekly taco dinner. Instead of using the usual ground beef I will just use ground chicken instead.
Ingredients:
1 pound lean ground chicken
Corn tortillas- I usually make 3 per adult and 1-2 per child
Garnishes- We used jack cheese, lettuce, tomato, onion, avocado, and some taco sauce.
Feel free to add some taco seasoning from my ground beef taco recipe too. 2-3 TBSP. is how I like it.

Directions:

In a frying pan cook your ground chicken. If you are going to make the rice and beans I would start them ahead especially the beans. Start the beans about 45 minutes before you plan to be eating dinner and then start the rice. Fry your tortillas- In a small frying pan heat a half inch of vegetable oil and once oil is heated add a tortilla, once I bubbles flip and cook on other side about 3-5 seconds. Transfer tortilla to a plate lined with a paper towel and pat with a paper towel to soak excess oil. Chop your garnishes.
Once all ingredients are cooked build your tacos. I made mine in this order- tortilla, rice, beans, chicken, lettuce, tomato, onions, avocado, and cheese. Add cilantro too for extra flavor.
I served this with my cilantro brown rice and pressure cooked black beans

I also made some fried flour chips out of the Udi’s flour tortillas.
