I love the salad. I find that a burrito bowl is just too filling for me. I get lettuce, chicken, a small amount of black beans and rice, salsa, peppers and a side of guac and chips. My husband gets a bowl with chicken, rice, beans, peppers, corn salsa, mild salsa, cheese and lettuce. My daughter gets a build your own carnitas taco kit with corn tortillas, rice and beans. My son gets a cheese quesadilla on a corn tortilla with rice and beans. My husband found the ice tea upset his stomach the last few times and if they have any GF cider I like to indulge.
We only get to eat out a few times a month. The budget is tight these days on just one income. I like to make Spanish inspired dishes often and this rice is a favorite so one night on Cooking and Cocktails I made it on a whim and it turned out amazing.
My Grandma makes a traditional Spanish rice and it is delicious. She has taught me a million times how to make it and for some reason it almost never turns out. Its crazy!
You will find this to be a simple and inexpensive go-to. I use Organic Long Grain White Rice and I find that it costs less than $2.00 to make this with dinner.
Use it as a side dish, in burritos, on nachos or make a salad or burrito bowl like Chipotle. Easy, simple, delicious and inexpensive!!
In a medium sized sauce pan bring all ingredients to a boil. Reduce heat to medium low and cook for 20 minutes. Enjoy!
