While doing a Whole30 I decided to make shredded Carnitas. Even though that challenge is long gone, I still continue to make these often because they are so versatile. I always use my Instant Pot when I make this. If you have not gotten an Instant Pot
yet, do yourself a favor and order 2! One for you and one for someone you really love because this thing is my go-to every day!!

Easy Gluten Free Slow Cooked Carnitas
The great part about these Easy Gluten Free Slow Cooked Carnitas is that you can use the sow cooker, or Instant Pot. I love using both for different reasons. The Instant Pot is great if I don’t have time to make it ahead, but the slow cooker is awesome for throwing it together before work and having dinner done when you get home. There is nothing better than walking in the door on a long day and smelling the slow cooked carnitas.
How do I make these Easy Gluten Free Slow Cooked Carnitas?
Add all ingredients to your Instant Pot and cook on the poultry setting. When done take out and shred and then add back in the pot and let it sit in the juices for about 10 minutes and then serve any way you choose.
For the Slow Cooker Method you will add all of the ingredients to the slow cooker and cook on low for 8 hours. You can then shred the pork with a knife and fork. Enjoy!!
Salad:
For the salad I had a bed of organic romaine lettuce, salsa. guacamole, tomatoes, green onions, bell peppers, yellow onion and some of Tessame’s southwest ranch dressing.
