Instant Pot Carnitas Paleo
We love a good carnitas taco or salad bowl from Chipotle. However, eating out isn’t always practical or healthy. This simple recipe is so darn easy to make and the flavor is so fabulous that I can’t control myself from snacking on the meat as I’m shredding it.
When it’s hot during the summer months, easy recipes like this instant pot carnitas recipe are my go-to. I hate using the oven and getting the house all hot. With the instant pot you can just throw it together and it cooks so fast, but tastes like it was slow cooked all day.
Instant Pot Pork Carnitas
Can you make this in the slow cooker?
Of course you can! It will just take a lot longer. I haven’t slow cooked carnitas in a long time, but you should cook it on low 6-8 hours or until its ready to shred nicely.
If you are wondering what appliance I use to make this, I have two that I go back and forth between. I use my Instant Pot and my Crock Pot 8 qt Express Cooker. Between the two I prefer the Crock Pot Express because it has a non stick bowl and the IP has a stainless steel bowl. The Crock Pot is easier to clean up and if you want an all in one, it’s a great option.

- Onion
- Garlic
- Green Chiles
- Pork Tenderloin
- Sea Salt
- Granulated Garlic
- Chili Powder
- Ground Cumin
- Broth
How do I make these instant pot carnitas keto?
These are naturally gluten free, dairy free, paleo, and keto. You can even make them whole 30 compliant by making sure that your broth is safe.
The best part about this recipe is how easy is to make! You will add all of the ingredients to your instant pot and stir it around to combine. Then put the lid on and cook on high pressure for 35 minutes. Release the pressure and remove the tenderloin, then slice it diagonal with a knife and use a fork to shred it.
Put the shredded carnitas back in the Instant Pot with the juice. Use a slotted spoon to remove it from the pot. You could even drain it a bit if you would like, but reserve some of the juice for storing it in the fridge if there are leftovers.

Ingredients
- 1 onion diced
- 3 tbsp minced garlic
- 4 oz green chiles diced, canned
- 1 1/2 lbs pork tenderloin
- 1 tsp sea salt
- 1 tsp granulated garlic
- 1/2 tsp chili powder
- 1/2 tsp ground cumin
- 1 cup broth
