Instant Pot Pork Carnitas (paleo, keto)

These easy and delicious pork carnitas are the perfect healthy weeknight dinner.

Ingredients

  • 1 onion diced
  • 3 tbsp minced garlic
  • 4 oz green chiles diced, canned
  • 1 1/2 lbs pork tenderloin
  • 1 tsp sea salt
  • 1 tsp granulated garlic
  • 1/2 tsp chili powder
  • 1/2 tsp ground cumin
  • 1 cup broth

Instructions

  • Add all of the ingredients to your instant pot and stir it around to combine.
  • Put the lid on and cook it on high pressure for 35 minutes.
  • Release the pressure and remove the tenderloin, then slice it diagonal with a knife and use a fork to shred it.
  • Put the shredded carnitas back in the Instant Pot with the juice. Use a slotted spoon to remove it from the pot. You could even drain it a bit if you would like, but reserve some of the juice for storing it in the fridge if there are leftovers.
