These easy and delicious pork carnitas are the perfect healthy weeknight dinner.

Ingredients
1oniondiced
3tbspminced garlic
4ozgreen chilesdiced, canned
1 1/2lbspork tenderloin
1tspsea salt
1tspgranulated garlic
1/2tspchili powder
1/2tspground cumin
1cupbroth
Instructions
Add all of the ingredients to your instant pot and stir it around to combine.
Put the lid on and cook it on high pressure for 35 minutes.
Release the pressure and remove the tenderloin, then slice it diagonal with a knife and use a fork to shred it.
Put the shredded carnitas back in the Instant Pot with the juice. Use a slotted spoon to remove it from the pot. You could even drain it a bit if you would like, but reserve some of the juice for storing it in the fridge if there are leftovers.
