Ingredients

Cilantro Lime Shrimp

  • 1 lb. Peeled and Deveined Shrimp

Marinade

  • The juice of 2 Limes
  • 4 Cloves Diced Garlic
  • ½ tsp. Pink Himalayan Sea salt
  • ¼ tsp. Crushed Red Pepper
  • 2 TBSP. Avocado Oil

Cilantro Lime Rice

  • 2 Cups Cauliflower Rice
  • 1 TBSP. Avocado Oil
  • 2 TBSP. Lime Juice
  • 1 TBSP. Diced Garlic
  • 1 TBSP. Diced Cilantro
  • Salt to taste

Instructions

Cilantro Lime Shrimp

  • Add shrimp, lime juice, garlic, salt, and red pepper to a bowl, toss. Cover and marinade for 20 minutes.
  • In a skillet heat the oil on medium heat and add the shrimp marinade mixture. Cook 3-4 minutes on each side. Remove the shrimp from the skillet and make the Cilantro Lime Rice.

Cilantro Lime Rice

  • Heat avocado oil in a skillet on medium heat. Add cauliflower, garlic, and lime juice.
  • Cook for 6 minutes. Add cilantro and salt to taste. Serve with Cilantro Lime Shrimp.
