Chipotle Cilantro Lime Rice

This Chipotle Cilantro Lime Rice Recipe is something I have been making for years. In this post I will tell you how to make cilantro lime rice which is the perfect rice for taco bar dinners! This is naturally free of gluten, dairy, nuts, soy and corn which makes it something you can serve with confidence!

Chipotle has been on of our go-to restaurants since the beginning of our gluten free journey. With all of our different intolerances there is something for each of us there. Corn has made it a little more difficult, but we have found ways around it.

Chipotle Cilantro Lime Rice

I originally created this recipe when we were on such a tight monthly budget that eating out was something we only got to do once or twice a month, depending on the cost of where we ate. We loved Chipotle and craved it more often than we could afford it. I started making us burrito bowls with whatever we had around the house.

I would add this cilantro lime rice, some of my pressure cooked black beans , bell peppers (if we had them), whatever meat we had, avocado, lettice, salsa and anything else I could find in the fridge. That helped us to get our fix while staying on budget.

Growing up my Grandma made traditional spanish rice regularly and its always delicious. I have tried to make it a million time and sometimes it turns out, but mostly it doesn’t. It’s crazy!

However, every single time I make this cilantro lime rice it turns out perfect! Plus, its just so darn delicious that this is my favorite rice to serve.

What ingredients do I need to make this Chipotle Cilantro Lime Rice?

  • Long grain white rice
  • Water
  • Cilantro
  • Lime Juice
  • Sea Salt
  • Cumin, Granulated Garlic, and Pepper

These simple ingredients make this a flavorful side dish that is budget friendly. Any long grain white rice will do, but my favorite is Lundberg Organic.

How to make Cilantro Lime Rice…

It’s truly as simple as adding all of the ingredients into a medium sized saucepan, stirring and then bringing to a boil. Put the lid on and reduce the heat to medium/low to keep a light simmer. Cook for 20 minutes. All of the water should be absorbed and it should fluff up with a fork.

Having so many different food intolerances and issues having a taco bar has become something that is simple for hosting friends. This is the perfect rice for taco bars!
 
Enjoy this as such a side dish, in a burrito bowl, on top of nachos, or even as a salad. The options are endless, enjoy!
