Funfetti Donuts with Strawberry Glaze (Gluten Free, Dairy Free)

My palette has changed a lot since going gluten free and I don’t crave the things I used to. One thing hasn’t changed though and it’s actually gotten worse because I feel so deprived and that is my love for donuts.

When I lived in California I had 2 bakeries that offered real yeast donuts. One has since closed down and when I moved to Washington State there were no donuts to be found. Cake donuts are delicious but nothing and I mean NOTHING, replaces that delicious yeast raised and deep fried flavor. Oh how I dream of maple bars.

I am still in the process or creating a yeast donut recipe. It might be my greatest recipe accomplishment once it happens. Until then, I am going to continue fun baked donut recipes because the kids can’t tell the difference and they are very satisfying with the right glaze on top.

I have a rich and decadent chocolate donut recipe on the blog, but I wanted to create something for the kids and adults alike. This donut is lighter and the strawberry glaze gives makes a perfect fun treat. The pink frosting is so fun and this would be the perfect treat to serve at a birthday party, baby shower or brunch.

These Funfetti donuts are a delicious and healthier spin on the Funfetti you might remember as a child. I wanted to create something fun for the kids that we all could enjoy. The kids loved this recipe for several reasons, but let’s prioritize here, SPRINKLES! Anything with sprinkles is always exciting and I do limit how often I use them in the food we eat, so this was an extra special fun treat.

I let the kids get involved by pouring in the sprinkles and also stirring them in. They really enjoyed getting to be a part of the baking process. After you frost the donuts, you can let the kids decorate their own as well.

So, print this out, grab the kids and get to baking! Also, homemade donuts taste best when frosted right before eating. Frost before you serve for optimal flavor. Enjoy!

Wilton Nonstick 6-Cavity Donut Pan


1 tsp. Xanthan Gum

2 tsp. Baking Powder

2 tsp. Baking Soda

¼ tsp. Salt (dash)

1 Cup Water (boiled)

1 Cup Dairy Free Milk

1 Cup Sugar

1/3 Cup Dairy Free Butter

2 TBSP. Coconut Oil

1 TBSP. Vanilla

2 Eggs

¼ Cup Sprinkles


1.      Preheat oven to 350 degrees.

2.      Boil the water in sauce pan with ½ cup of sugar for about 3 minutes. Allow to cool.

3.      In your stand mixer blend the other ½ cup of sugar with the butter and melted coconut oil.

4.      Add the milk, and add the cooled water sugar mixture (the mixer should be going the entire time)

5.      Add the eggs, vanilla, salt, baking soda, baking powder, xanthan gum, and GF all-purpose flour.

6.      Beat on medium for about 5 minutes, scraping the sides halfway though, until your batter has almost a pudding like consistency.

7.      Fold in your sprinkles last.

8.      Pour into your greased donut pan (coconut oil is the best to grease with). Bake 12-14 minutes or until a toothpick comes out clean.

9.      Allow donuts to cool for 10 minutes, and then gently remove them from the donut mold by taking a butter knife and lifting the edges of the donut until it pops out effortlessly.

10.  Transfer donut to a cooling rack for at least 20 minutes before frosting. DO NOT FROST THE DONUTS UNTIL YOU ARE READY TO EAT THEM. If you are baking these the night before, frost them right before serving. Enjoy!

Strawberry Glaze

4Strawberries (tops cut off)

1 ½ Cup Powder Sugar sifted

1 tsp. Light Corn Syrup


1.      Puree the strawberries in a blender.

2.      Add to the puree the powdered sugar, corn syrup, and salt. Mix well.

3.      Drop the donut into the bowl and take out with your finger being careful not to rub off the frosting.

4.      Lay donut frosting side up on a piece of parchment paper one-by-one. 

Chocolate Glaze:


½ Cup Chocolate Chips

2 TBSP. Coconut Oil

2 tsp. Light Corn Syrup

2 tsp. Chocolate Almond or Cashew Milk

1 tsp. Vanilla


1.      Melt chocolate chips, coconut oil, and corn syrup in a microwave safe bowl in the microwave for 30 second intervals stirring in between each time.

2.      Once melted, add the vanilla and milk, stir well.

3.      Drop the donut into the bowl and take out with your finger being careful not to rub off the frosting.

4.      Lay donut frosting side up on a piece of parchment paper one-by-one.
