Chocolate Bundt Cake (Gluten Free, Dairy Free)

This Gluten Free Chocolate Bundt Cake is rich, moist and absolutely delicious. You would never know its gluten and dairy free. It is the perfect dessert for any occasion and everyone you share with will enjoy it. One of the reasons I love to cook and bake and work on this blog, is because I am able to bring others joy with food. Food brings everyone together.

 

Do you ever feel incredibly overwhelmed and you are unable to focus? That is where my head has been lately. Spinning around trying to concentrate on one task and then I find myself trying to do another one. Then before you know it there are 10 tasks that need to be completed, but instead you just abandon all of them. Sometimes when this happens I just need to get back into the kitchen. 

Gluten Free and Dairy Free Chocolate Bundt Cake is the perfect simple recipe that will always impress your guests.

I need to just pull out my cookbook and get to work, because that is my happy place. Cooking brings me joy and its meditative in a way. Unless  I have an audience that isn’t helping and complaining. Then I tell them to either get to work, or get out of my kitchen. 
In those times of joy, or in times of sadness I like to bake and cook. It clears my mind, and brings me back to where I need to be.

It’s not as bad as it might seem in that moment. You question yourself, the world. Especially with all of the horrible things happening daily. 
So, sometimes when things seem like it may all be too much. You might just need to get simple again. Throw on your apron, twirl and dance and bake a good cake.

How do I make this Gluten Free and Dairy Free Chocolate Bundt Cake?

  • You will need to mix all of the ingredients together according to the directions. Preheat your oven and pour it into a greased bundt cake pan.
  • You bake it, let it cool slightly then pop it out and let it finish cooling.
  • Make your ganache and then drizzle it over the top.
  • Its super fun to add sprinkles and fresh berries if you want to dress it up. Serve it with a scoop of Vegan Mint Chip Ice Cream to really impress you guests.

Gluten Free & Dairy Free Chocolate Bundt Cake

This delicious rich Bundt cake is moist and delicious.

Ingredients

  • Cups Water
  • Cups Coconut Oil
  • 4 Eggs
  • 2 tsp. Vanilla Extract
  • 1 ½ Cups of Sugar
  • Dash of salt
  • 1 tsp. Xanthan Gum
  • 2 tsp. Baking Powder
  • 1 Cup Cocoa Powder
  • Cups GF All Purpose Flour

Chocolate Ganache

  • 3.5 oz. Chocolate Bar gluten free and dairy free
  • 1 Cup of Coconut Cream
  • 1 tsp. Vanilla
  • 1 TBSP. Coconut Oil

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Beat the eggs, sugar and vanilla.
  3. Once combined, add the melted coconut oil and mix for 2 minutes.
  4. Add water, flour, cocoa powder, salt, xanthan gum and baking powder.
  5. Once all ingredients are mixed well, pour into a greased Bundt cake pan.
  6. Bake at 350 degrees F for 30-35 minutes or until a toothpick comes out clean.

Chocolate Ganache

  1. In a sauce pan melt the chocolate bar, coconut cream, vanilla and coconut oil. Once melted, remove from heat immediately. Allow to cool for 5-10 minutes before pouring onto the cake. Serve and enjoy!
