Gluten Free Cherry Cobbler (Dairy Free)

It’s essential to always have an easy cherry cobbler recipe on hand. So, after going gluten free I immediately created a gluten free cherry cobbler. This gluten free cherry cobbler with fresh cherries is something I have been making for years, so I am excited to finally share it with all of you! Gluten free dairy free cherry cobbler can taste just as good as you remember it!

Cherries are one of my favorite fruits. It’s a special fruit because they are very expensive from the grocery store and we only enjoy them seasonally.

Fortunately, we live near one of the most popular cherry growing areas around. Brentwood is known for their cherries and there are lots of cherry farms to choose from. You can find the different varieties of cherries at all of the local farm stands. However, they offer U-pick at most of the cherry farms in late May and early June.

It is hard to believe that before this year I had never been cherry picking. Typically when it is cherry picking time the weather is already too hot for me. I can’t be in direct sunlight for too long and can’t tolerate being outside past about 80 degrees unless I am in the shade. The kids had always been too little for me to want to take them to a cherry farm, but this year seemed perfect.

This year we got some amazing weather in the month of May. We are also homeschooling now, so that gave us flexibility to just get up and go one morning. With the stay at home order it also made the crowds flocking to the U-pick farms much smaller even though the farms were open with some restrictions.

I bought 2 cherry trees from a newer cherry farm this year and I am so excited about them! One morning I saw that they just opened the U-pick farms and told the kids let’s go! It was super spontaneous of me and that is very much out of my character, but homeschooling and not having all of the stresses of public school has made me much more easy going at times.

The kids absolutely loved it and we had a great time. It will now be a tradition every year until our little baby trees produce enough for all of our baking and snacking.

With all of our delicious cherries ready to go I knew it was time to finally get the recipe up on the blog to share with all of you!

What is Cherry Cobbler?

Cherry cobbler is a dessert made with cherry filling that is similar to cherry pie and topped with a cake like biscuit topping and baked. It is sweet and pairs perfectly with a big scoop of vanilla ice cream on top.

What Ingredients do I need?

  • Fresh cherries
  • Water
  • Sugar
  • Tapioca starch
  • Gluten Free Flour Blend
  • Baking powder
  • Salt
  • Xanthan gum
  • Boiling Water
  • Vegan Butter
  • Almond extract

How do you make gluten free cherry cobbler with fresh cherries?

You will start by taking the pitted cherries and adding them to a 3.5 qt or larger saucepot. The one I use is an Anolon pan and you can click HERE to check it out.

Add the water, sugar, and tapioca starch to the pot and give it a good stir to blend the sugar and starch together all over the cherries.

Put the pan on the stove and turn it on medium heat. Bring it to a simmer, this took me about 5 minutes. Reduce the heat to medium low and simmer for another 4-5 minutes. The cherries should be soft and the mixture should be thickened. Turn the heat off and start the cobbler.

Preheat your oven to 350 degrees F.

To make the cobbler, have all of your ingredients ready to go including the boiling water. The water doesn’t still have to be boiling as you pour it in, but it needs to be steaming hot.

Start by adding the flour, baking powder, salt, and xanthan gum to a mixing bowl, stir it up to blend well. Then add the sugar, give it another good stir.

Add the butter and almond extract and then cut the butter into the mixture with a pastry blender.  Once the butter is blended through you will pour the boiling water into the bowl and stir it up. You should have a nice thick dough.

Spray a 3 quart baking dish with non-stick spray. This is the one I have HERE.  Pour the cooked cherries into the baking dish. Then, using an ice cream scooper scoop the dough and place it evenly on top of the cherries. Make sure the scooper has a trigger to get the dough out easily. The one I have and love is HERE.

Sprinkle a little bit of sugar on top of the biscuits and bake for 30 minutes or until a toothpick comes out of the biscuit clean. Remove from the oven, allow to cool for about 15 minutes and then serve warm with vanilla ice cream on top.

You will love the simplicity of this recipe. I will definitely be trying it with frozen cherries in the summer and I will let you know how that goes by updating the recipe with directions on how to make it with frozen cherries. Enjoy!

Cherry Filling

Cobbler Topping

  • 1 3/4 cups gluten free all purpose flour
  • 1/2 cup sugar plus 1 1/2 tsp to sprinkle on top
  • 2 tsp baking powder
  • dash salt
  • 1 tsp xanthan gum
  • 1/2 cup vegan butter regular butter can be used too
  • 1/2 cup boiling water
  • 1 tsp almond extract

Instructions
