Gluten Free Garlic Pasta
This amazing gluten free Garlic Pasta is the perfect weeknight meal. I am always looking for healthy and delicious dinners that are easy, inexpensive and that the entire family will love. This recipe is also vegan, but feel free to add shrimp or chicken if you would like.

I have played around with this Garlic Pasta recipe a few times and it was always a hit with my family. We loved garlic and this recipe packs some punch with it, most of all it is the perfect healthy dinner to get that healthy garlic in and give your immune system a boost.
When you make this you can use fresh or dried herbs. Both taste amazing, so during the summer I like to pick the herbs from my garden, but dried herbs taste amazing too.
This Garlic Pasta dinner takes less than 20 minutes to make and is incredibly inexpensive, therefore it is the perfect dinner to put on your budget friendly meal plan. It is also the perfect dinner for a meatless Monday. I served it with my French bread recipe and broccoli. For the broccoli I simply used the same pan that I cooked the sauce in (once it was empty) and I added a few tablespoons of avocado oil along with lots of fresh garlic, salt and pepper. I added a splash of water, and then cooked it until it was tender.

Every time I make this Garlic Pasta the whole family eat their entire plates and it is hard to resist seconds.
Gluten free noodles can be difficult, therefore I tend to stay loyal to the ones that I have tried and that cooked well. I never know what to expect when making a new brand of noodles, and I have had many noodles turn into mush, or not cook all of the way. Finding one with excellent texture can be a challenge, while I have to say that the Tresomega gluten free organic quinoa spaghetti turned out absolutely perfect. I was pleasantly surprised and very happy with it. I cooked it according to the box directions and it had excellent texture, taste and did not get mushy at all! My favorite noodles are a quinoa blend.

Ingredients
Sauce
- Can Diced Tomatoes undrained
- ¼ Cup Avocado Oil
- 3 TBSP. Garlic chopped
- ¼ tsp. Pepper
- 1 tsp. Sea Salt
- 1 ½ tsp. Parsley
- 1 tsp. Basil
- 1 box of Gluten Free Spaghett
Instructions
- Boil the noodles according to the box directions.
- In a large pan or wide sauce pan add the avocado oil and heat on medium heat.
- Add the chopped garlic and sauté for 1 minute.
- Add the salt and pepper.
- Reduce heat to medium low.
- Add the can of un-drained tomatoes, parsley, and basil.
- Cook 6-7 minutes stirring every minute or so.
