This easy Gluten Free Garlic Pasta is tossed with a simple garlic tomato sauce made with olive or avocado oil and dried herbs. It's dairy free, vegan, budget friendly and perfect for an easy weeknight dinner.
In a large pan or wide sauce pan add the avocado oil and heat on medium heat.
Add the chopped garlic and sauté for 1 minute.
Add the salt and pepper.
Reduce heat to medium low.
Add the can of un-drained tomatoes, parsley, and basil.
Cook 6-7 minutes stirring every minute or so.
Add the cooked and drained pasta directly to the skillet and toss until evenly coated in the garlic tomato sauce. Top with fresh herbs if desired and serve.
Notes
Gluten free pasta: Jovial and Banza are two of my favorite gluten free pasta brands.Oil: I've made this recipe with both avocado oil and olive oil. Either works well.Herbs: I use dried parsley and basil in the sauce. If I have fresh herbs on hand, I'll add them on top before serving.Add chicken or shrimp: Cook the protein separately and add it during the final minute of cooking the sauce. Add the pasta and toss everything together.Add chicken sausage: Cook the sauce for 2 minutes, then add the chicken sausage. Continue cooking for another 10 minutes, stirring every 2 minutes, until the sausage is cooked through. Add the pasta and toss to combine.Storage: Store leftovers covered in the refrigerator for up to 3 days.
