Gluten Free Kale and White Bean Sausage Soup

Kale and White Bean Sausage Soup is the perfect hearty dinner that is budget and family friendly. This can be made quickly and fill up everyone!

Ingredients

  • 2 tbsp oil
  • 2 tbsp minced garlic
  • 1 yellow onion (med size) diced
  • 16 oz ground sausage I like italian sausage
  • 4 cups broth chicken or vegetable
  • 4 cups water you can use broth if desired
  • 1 1/2 lbs red or gold potatoes sliced into coins
  • 2 15.5 oz canned white beans drained and rinsed. Cannellini is my favorite
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp marjoram
  • 1 tsp granulated garlic
  • 8 oz baby kale washed and chopped if needed

Instructions

  • In a large stock pot on medium heat, heat the oil.
  • Add the onions and garlic and cook until the onions are translucent, about 2-3 minutes,
  • Add the sausage, cook until browned. About 10 minutes.
  • Add the broth, water, spices and seasoning. Bring to a boil.
  • Add the potatoes and bring back to a boil and cook for about 15 minutes, the potatoes should be tender.
  • Add the kale and coconut milk. Bring to a simmer and cook for an additional 10 minutes. Enjoy!
