Funny story- I created these vegan breakfast cookies on accident recently. I had planned to make a blueberry scone recipe, but this was the result. I didn’t get the rise I was hoping for and that is likely due to these not having any eggs. After tasting one (or three), I decided that they were too darn good to scrap and they would make for the perfect Easy Blueberry Breakfast Cookies recipe, so here they are!

You can personalize these to however you are feeling that day. In my next batch I plan to add some almond slivers. You could use cranberries, chocolate chips, coconut…. really anything to fill these up and make them into your favorite breakfast treat.

Having young kids makes me constantly look for creative ways to feed them healthy food that they enjoy. I don’t think anything gets better than a healthy vegan breakfast cookie!

How do I make these Easy Blueberry Breakfast Cookies?

Preheat the oven to 350ºF.

In a bowl, whisk together the grain free all purpose flour, grain free baking powder, baking soda, and salt.

Add the solid coconut oil and “cut it in” with a pastry cutter to form crumbs.

Add the syrup, apple cider vinegar, coconut milk, and blueberries. Knead with your hands until you form a soft and slightly sticky dough.

Line a baking sheet with parchment paper. With a spoon, grab a ball of the dough and place it on the parchment paper. Repeat until you have 12 cookies.

You can shape them with your fingers if they are rough around the edges to smooth them out.

Bake for 20 minutes. Allow to slightly cool before serving.
