Easy Blueberry Breakfast Cookies (Paleo, Vegan)

  • Preheat the oven to 350ºF.
  • In a bowl, whisk together the grain free all purpose flour, grain free baking powder, baking soda and salt.
  • Then you will add the solid coconut oil and cut it with a pastry cutter to form crumbs.
  • Add the syrup, apple cider vinegar, coconut milk, and blueberries. Knead with your hands until you form a soft and slightly sticky dough.
  • Line a baking sheet with parchment paper. With a spoon grab a ball of the dough and place it on the parchment paper. Repeat until you have 12 cookies.
  • You can shape them with your fingers if they are rough around the edges to smooth them out.
  • Bake for 20 minutes. Allow to slightly cool before serving.
