Chocolate Covered Strawberries- Free of Allergens (Pascha Chocolate)

Depending of your sensitivity to gluten, it may be difficult to find chocolate that is safe. There are very few brands on the market that are made in a gluten free facility. If you need dairy free chocolate your options just got much smaller. Even the chocolate I have found that doesn’t have any dairy in the ingredients is manufactured in a facility that also manufactures gluten, nuts and dairy. On the label it often says: “May contain milk, nuts, and wheat”. Chocolate Covered Strawberries- Free of Allergens (Pascha Chocolate).

For most of us a “May Contain” is a risk that we can’t take. When I attended the Gluten Free Food and Allergy Fest last year in Portland, OR, I met an amazing company called Pascha. They were new to the market and had some amazing allergen free products such as chocolate bars, white chocolate baking chips, chocolate chips and even chocolate fruit spread. I was so excited to try their products and now I am even more excited to bring them to you with this delicious recipe.

 

Chocolate Covered Strawberries are a symbol of love. You make them for someone you love and care about. They are simple enough to make with just a few ingredients and your Valentine who has allergies will be blown away when you present these with a glass of champagne.

 

 
 
When you suffer from food allergies, it is the small things that go a long way. Simply taking some time to make a delicious treat means a lot. Last year for Valentine’s Day my husband made me a gluten free tiramisu. I had not had it for 4 years and it meant a lot.

 

Imagine how excited your Valentine (and that could be your Mom, Dad, Sister, Brother, or Child) would be when they saw these.

 Chocolate Covered Strawberries- Free of Allergens (Pascha Chocolate)

 

 

Ingredients:

 

14-20 Strawberries depending on size

 

1 Bag of Pascha Chocolate Chips (I would recommend Semi-Sweet Dark Chocolate)

 

1 TBSP. Coconut Oil

 

1 tsp. Pure Vanilla Extract

 

 

Optional:

 

Sprinkles

 

Pascha White Chocolate

 

 

Directions:

 

1.       Wash your strawberries and allow them to fully dry.

 

2.    In a double boiler, add the chocolate chips, coconut oil and vanilla to the top bowl. Add enough water to the pan so that there is a ½ inch space between the water and top bowl. Place the double boiler on low heat and stir until the chocolate is melted, making sure to not overheat. The water should not boil. Remove from heat once chocolate is melted and ingredients are well combined.

3.       Line a cookie sheet with parchment paper

 

4.       Hold the strawberry by the stem and dip into the chocolate, covering all sides evenly. Allow the excess to drizzle off into the bowl and then place strawberry on the parchment paper. If you are adding sprinkles allow the strawberry to sit for 2 minutes and then coat it in the desired amount of sprinkles.

 

5.       Place in the fridge for 2 hours and then serve. Store in the fridge until served.

 

 

White chocolate drizzle:

 

1 Bag of Pascha white chocolate chips (use about ¼ cup per 4 strawberries)

 

 

Directions:

 

1.       You will need a double boiler or you can use a sauce pan with a Pyrex bowl on top of it. Boil the water underneath and then place the bowl on top and pour the white chocolate chips in the bowl. Stir continuously until it’s melted through and remove from the heat immediately.  This will over heat and get too hard, if you cook for too long, so only keep on the heat until it’s melted. Remove the bowl and allow it to sit for 1 minute.

 

2.       Pour in a pastry bag or plastic squeeze bottle for decorating and create your drizzles on the strawberries.
