Whipped Coconut Cream
Once you go dairy free finding a simple whipped cream option can become a challenge. I created this Whipped Coconut Cream recipe to use whenever I need a dollop of sweetness. It is only 3 ingredients plus its naturally gluten free and vegan. It’s a healthy sweet treat that you won’t mind making and feeding to your family.
Whipped cream is an essential. I love it on and in many different recipes. As a kid I enjoyed it on Jell-O and pudding, or simply dipping fresh fruit in it. Now as an adult I love fresh whipped frosting on a cake, or using this particular recipe to make creamy desserts like popsicles.
Whole fat coconut cream in the can is going to be your new go-to. I was buying mine at Trader Joes. They recently switched to an organic brand and I was excited. However, it does not whip and does not blend well. I have had to experiment with other brands and I have found that Thai Kitchen Coconut Cream works excellent and its easy to find on amazon and in stores.
It’s super easy to make and only takes a few minutes. You can use a Hand Blender or KitchenAid Stand Mixer to whip it up.
When my daughter saw me taking pictures of it she immediately demanded a taste and wanted, “mo, mo!” So I ended up giving her a small bowl of it and a spoon, she was sad when the bowl became empty so quickly.
