With the weather changing from warm to hot here in California I wanted something that would be refreshing, filling, delicious and healthy. This gluten free mediterranean pasta salad is all of those things!

Gluten Free Mediterranean Pasta Salad

I used a chickpea based pasta to make this a grain free dish. My favorite way to eat this is for lunch. Truly this is the perfect summer lunch recipe. You can also make this to serve as a side dish. There is no going wrong here.

What ingredients do I need to make this yummy pasta salad?

  • 1 8 oz box gluten free pasta, cooked. I used chickpea pasta to make this grain free, but use whatever is your favorite.
  • 2 cups peeled and quartered cucumbers
  • 1 6 oz jar quartered and marinated artichoke hearts
  • 2.25 oz can sliced olives
  • 1 7 oz jar sun dried tomatoes
  • 2 pouches StarKist E.V.O.O.™ tuna
  • 1/2 cup balsamic vinaigrette, you can make your own with olive oil, balsamic vinegar, salt, pepper, granulated garlic, basil and parsley

 

How to make this gluten free mediterranean pasta salad?

Cook the pasta and pour it into a large bowl. Add all of the ingredients and give it a good stir. You can serve now, or refrigerate and store later. To make your own balsamic vinaigrette simply add all of the ingredients to a mason jar and shake it. It’s that easy!

Mediterranean Pasta Salad

This simple pasta salad is gluten free, dairy free and delicious. It's made with just a handful of ingredients.

Ingredients

  • 8 oz box gluten free pasta cooked. I used chickpea pasta to make this grain free, but use whatever is your favorite.
  • 2 cups cucumbers peeled and quartered
  • 6 oz jar quartered and marinated artichoke hearts drained
  • 2.25 oz can sliced olives drained
  • 7 oz jar sun dried tomatoes drained and cut if needed
  • 2 pouches StarKist E.V.O.O.™ tuna
  • 1/2 cup balsamic vinaigrette you can make your own with olive oil, balsamic vinegar, salt, pepper, granulated garlic, basil and parsley

Balsamic Vinigairette

  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 tsp sea salt
  • dash pepper
  • 1/2 tsp dried basil
  • 1/2 tsp dried parsley
  • 1/2 tsp granulated garlic

Instructions

  1. In a large bowl add the pasta, cucumbers, artichoke hearts, olives, sun dried tomatoes and tuna pouches.

  2. You can use 1/2 cup of store bought balsamic vinaigrette or you can make your own by taking all of the ingredients shown and adding it to a mason jar. Give it a good shake or stir.

  3. Pour the vinaigrette on top and gently stir to combine.

  4. Serve immediately or refrigerate.
