In a stand mixer cream together the eggs, butter, sugars, and vanilla on medium high speed for 3 minutes. You want to fluff them up.
With the stand mixer on the lowest speed add the gluten free flour, baking soda, baking powder, xanthan gum, and salt. Mix on medium speed for 3 minutes scraping the sides of the bowl halfway through.
Fold in the chocolate chips.
If time allows let the dough chill for a few hours in the fridge.
