Gluten Free Dairy Free Chocolate Chip Cookies

These are literally the best gluten free cookies ever! They are easy and everyone will love them.

Ingredients

  • 3 Eggs
  • 1 1/2 Cups Vegan Butter
  • 1 Cup Sugar
  • 1 Cup Brown Sugar
  • 2 tsp. Vanilla
  • 3 Cups Gluten Free All Purpose Flour
  • 1 1/2 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • 2 tsp. Xanthan Gum
  • 1/4 tsp. Sea Salt
  • 2 Cups Chocolate Chips

Instructions

  • In a stand mixer cream together the eggs, butter, sugars, and vanilla on medium high speed for 3 minutes. You want to fluff them up.
  • With the stand mixer on the lowest speed add the gluten free flour, baking soda, baking powder, xanthan gum, and salt. Mix on medium speed for 3 minutes scraping the sides of the bowl halfway through.
  • Fold in the chocolate chips.
  • If time allows let the dough chill for a few hours in the fridge.
  • Bake at 350ºF for 14-17 minutes.
