Thanksgiving and pumpkin pie are two things that just go together. They always have and always will.

Thanksgiving was right around the corner and of course when I asked my husband and son what pie they would want for thanksgiving this year- pecan or pumpkin, pumpkin was the winner.

The perfect use of traditional Kimono fabric, Japanese cypress and modern touches in every room.

After I finally figured the crust out I could concentrate on the filling. The first pie on the agenda was pumpkin.

Eggs Pumpkin Puree Full Fat Coconut Milk Brown Sugar Vanilla Pumpkin Pie Spice Blend Salt

Ingredients

Preheat oven to 425 degrees F. In a large bowl add all of the ingredients and beat with a stand mixer or hand mixer until it is creamy and smooth. 

Pour into pie shell and bake at 425 for 15 minutes. Reduce heat to 350 and cook for an additional hour.

Allow to cool for 2 hours before refrigerating. Serve with coconut whipped cream. Store in the fridge. Enjoy!
