Equipment

  • Pressure Cooker

Ingredients

  • 2 Tbsp avocado oil
  • 4 carrots peeled and diced
  • 3 celery ribs diced
  • 1 onion diced
  • 3 Tbsp minced garlic
  • 6 cups gluten-free vegetable broth
  • 4 cups potatoes peeled and diced
  • 1½ tsp salt
  • ½ tsp ground cumin
  • 1 bay leaf
  • ½ tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 2 cups red lentils rinsed

Instructions

  • Turn the Instant Pot to Sauté mode. Add the avocado oil, carrots, celery, onion and garlic. Sauté for about 8 minutes, stirring frequently.
  • Add the rinsed red lentils and stir to combine. Sauté for an additional 2 minutes, then turn off Sauté mode.
  • Add the vegetable broth, potatoes, salt, cumin, bay leaf, thyme, oregano and parsley. Stir well and scrape the bottom of the pot to make sure nothing is stuck.
  • Secure the lid and set the pressure valve to Sealing. Select the Soup setting and allow the Instant Pot to run through its Soup program.
  • When the cooking cycle is complete, release the pressure according to your Instant Pot model's instructions. Once the pressure has fully released, carefully remove the lid.
  • Remove the bay leaf and stir the soup well before serving.

Notes

Lentils: This recipe was developed using red lentils. Different types of lentils cook differently, so I recommend using red lentils for the best results. Rinse them thoroughly before cooking.
Vegetable broth: Make sure your vegetable broth is labeled gluten free if needed.
Potatoes: Dice the potatoes into similar-size pieces so they cook evenly.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
Reheating: The soup will thicken as it sits. Add a splash of vegetable broth when reheating if you prefer a thinner consistency.
