Dairy Free Chocolate Frosting

Ingredients

  • 1/2 cup vegan butter Earth's Balance is my favorite
  • 1/2 cup vegetable shortening Spectrum is my favorite
  • 2 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup cocoa powder
  • 1.5 tbsp coconut milk or your milk of choice

Instructions

  • In your stand mixer cream the butter and shortening
  • Add the powdered sugar and cocoa powder, beat for 1 minute and med/low speed
  • Add the vanilla and milk
  • Continue to blend for 3 or so minutes with the speed on high, scraping the sides halfway. The frosting is done when it's light, fluffy and there are no clumps.
  • Frost your desired cake and enjoy!

Notes

Once your cake or dessert is frosting, store in the fridge and take out 30 minutes prior to soften. 
I don't recommend freezing the frosting because it can separate when it thaws.
