Pumpkin Spice Baked Oatmeal

This delicious and healthy baked oatmeal is gluten free, dairy free, flour free and full of amazing fall flavor.

Ingredients

  • 3 Cups Gluten Free oats
  • ¾ Cup Coconut Sugar or Brown Sugar
  • ¼ Cup Maple Syrup
  • 1 Cup Coconut Milk
  • ½ Cup Coconut Oil melted
  • 2 Eggs
  • 1 Cup Pureed Pumpkin
  • 1 Cup Shredded Coconut
  • 1 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • Dash Salt
  • 1 tsp. Cinnamon
  • ¼ tsp. All Spice
  • ¼ tsp. Nutmeg
  • 1 Cup Chopped Pecans

Instructions

  • Preheat oven to 350 degrees F.
  • Add all ingredients to a bowl except for pecans and coconut oil. Mix well with a mixer.
  • Add coconut oil and mix well.
  • Stir in pecans.
  • Pour into a greased 8X11 baking dish. Add additional pecans on top if desired.
  • Bake for 30 minutes.
  • Allow to cool before serving. Enjoy!

Notes

If you want a sweeter flavor use brown sugar in place of the coconut sugar.
You can also use 1 1/2 tsp. Pumpkin Pie Spice in place of the cinnamon, all spice, and nutmeg.
