Ingredients
8ozbox gluten free pastacooked. I used chickpea pasta to make this grain free, but use whatever is your favorite.
2cupscucumberspeeled and quartered
6ozjar quartered and marinated artichoke heartsdrained
2.25ozcan sliced olivesdrained
7ozjar sun dried tomatoesdrained and cut if needed
2pouchesStarKist E.V.O.O.™ tuna
1/2cupbalsamic vinaigretteyou can make your own with olive oil, balsamic vinegar, salt, pepper, granulated garlic, basil and parsley
Balsamic Vinigairette
1/4cupolive oil
1/4cup balsamic vinegar
1/2tspsea salt
dashpepper
1/2tspdried basil
1/2tspdried parsley
1/2tspgranulated garlic
Instructions
In a large bowl add the pasta, cucumbers, artichoke hearts, olives, sun dried tomatoes and tuna pouches.
You can use 1/2 cup of store bought balsamic vinaigrette or you can make your own by taking all of the ingredients shown and adding it to a mason jar. Give it a good shake or stir.
Pour the vinaigrette on top and gently stir to combine.
